What are some of your exciting food discoveries in veg*anism?

I have about 3 super happy moments.
1.) When I discovered vegan donuts and bakery thanks to veganessentials

2.) When I discovered an awesome Chinese restaurant with the best tofu dishes
and

I have to say the most exciting discovery would have to be the fact I didnt know food could be exciting period. Before becoming a vegan the only reason I had to eat food was to fill my stomache. There wasn't much I got excited over. Now I look forward to trying new things, and coming up with new recipes..Ok I wont lie, watching my boyfriend come up with new recipes, while I assist in the cooking proccess! Lol..

This wasnt hard for me to begin with, I had been a vegetarian for two years in the past, and didnt eat red meat or pork for almost ten years. I never liked milk (blech) so that was beyond easy for me. My favorite food has always been avacado, and I am hooked on hummus and always have been!

I also found that Tofu is the easiest thing in the world to cook and coming from someone who cant cook that truly is exciting!!! And it turns out that I am addicted to the stuff so what a plus for me.

Another would have to be when I went to Safeway, and for the first time saw a VEGAN marked package of the Boca Chicken patties. I dont know if they are slowly changing it over, because this is the only store I can find the vegan marked ones at, but it made me happy because we love to make buffalo mock chicken sandwhiches, and most substitutes taste like reheated burger meat to me. This brand is quite tasty.

I know people will say omg, how dare you want something that tastes like meat...but guess what, its not meat!!! And growing up eating those items, I dont think its strange to crave the nostalgia of it, and I have no shame in admitting so!

There is also this little gem of a restaurant in Phoenix called GREEN. It is amazing and if it wasnt so far from where I live I would eat it twice a week. 100% vegan, and even has alot of meat eating clientel. I need to give those owners a big kiss, because their food is just amazing.

first off, before I talk about exciting foods, I noticed that I don't have headaches, backaches and my hair doesn't fall out anymore since i've been a Vegan.

Foods;

I love making my own salad dressing, they're different everytime and taste better everyday!

I love throwing sunflower seeds on almost anything I eat.

I love making hummus and guacamoli, I use this for dips everyday!

I love making my own nut milk, much better than store bought milk (soy, rice, whole)

This summer I am doing a Program of RAW Veganism...
1)The energy is amazing,
2)the being able to eat all I want(withhin the program) not count calories.
3) Many nagging health problems are disappearing also.
4) I am losing weight

Discovering how to cook chickpea flower crepes. Very easy way to add a complementary protein to a grain-dish meal, like pasta. Combine chickpea flour (Garbanzo bean flour) with water to create a thin batter, the consistency of crepe batter. Fry in a small amount of oil, like making a crepe. Serve on the side as a sort of flat bread. Total time: less than 10 minutes.

vegetable samosas

sauteed spinach and mushrooms
tofu scramble
bulgur stuffed eggplants

I think it's the recipes with the really tasty combinations
that really do it for me.

some of my vegan food discoveries are:
1. artichoke dip! mm, it's so delicious... got it from this recipe book called ExtraVeganZa. makes my mouth water just thinking about it!

2. vegan restaurants! i'm fortunate to live in california where there are several vegan establishments. now i can have some of my once-favorite meat dishes without compromising my beliefs! for those of you who are in the cerritos, ca area, check out vegi wokery if you haven't already. order their peking 'duck' plate... it's so yummy!

3. everything vegetables! i hardly included any veggies (or grains, or nuts or anything else) in my old dishes, but now i'm learning to use more of them in every meal. cooking has become a hobby, not just a chore.

Hummus, mudjudara, Ethiopian restaurant vegetarian food (injira bread to scoop up veg stews with and eat like a kid with your fingers in public served with coca cola in wine glasses)...not that I am a vegan...but those are vegan foods I think that I have eaten...of course coca cola is not vegan though...I like Chinese vegetarian chop suey with tofu too....

Oh, and one time I had a camping book that had recipe for rice and bean burgers that you bake..those were good...if I could find the book, I could make some again.....

Oh, yes and lentil milk with all the fiber and some salt (instead of sweetners) is good..just blend some cooked lentils in a blender with the cooking liquid and add salt to taste, cool and drink. It is greenish black..you have to get used to the color..

I have learned about things I never heard of before, and really enjoy the new flavors. I eat quinoa, amaranth, pupusas, agave nectar, ployes, buckwheat, lentil cakes, lentil loafs, ruttabegga oven fries, cabbage stuffed with mashed chive potatoes, risotto, arancini, fennungreek, all sorts of sprouts, fresh pimentos (not like those yucky jarred things at all) tabboleh, and all sorts of other interesting things I had never even heard of before going veggie. Its a shame I am allergic to wheat-those mini wheats sound good!

-Japanese kabocha (pumpkin) curried with cauliflower
-bean burgers
-veggie wham (Worthington ham)
-portabello mushrooms
-smoothies (didn't really have them before)
