Crust:
2 cups biscuit crumbs
1/2 cup butter, melted


Filling:
4 packages (8 oz. each) cream cheese, softened
1/2 cup sugar
4 large eggs
2 tablespoons flour
1 1/2 teaspoons vanilla
1/4 teaspoon almond extract
8 squares white chocolate, melted
2 cups fresh raspberries
1 tablespoon cornstarch



Directions:
Crust:
Combine crumbs and butter. Press into the bottom and 2/3 up the sides of a 10" springform pan.


Filling:
In a large mixer bowl, beat cream cheese until fluffy. Beat in the sugar and add eggs one at a time. Gradually stir in flour, vanilla and almond extract. Slowly add melted chocolate and beat until combined.


Toss raspberries with cornstarch. Sprinkle over the crust. Pour the cheesecake mixture over top.


Put in oven which has been preheated to 350 degrees F. Immediately turn the oven down to 250. Bake for 1 3/4 to 2 hours, until cheesecake is set in the centre.


Let cool and then refrigerate overnight. Garnish with additional raspberries.

1 (9-inch) graham cracker pie crust
1/2 pint strawberries, hulled and sliced

My mom makes this super simple cheesecake all the time, and so did her mom, and her mom's mom.
If you buy Honeymaid grahm cracker crumbs it has the recipe on the back. it's the best cheesecake i've ever had - philadelphia cream cheese, AMAZING grahm cracker crust - ahh! i love it. try it :)

Super New York-Style Cheesecake

Vanilla Wafer Crust
1? C Finely crushed vanilla wafers (I've also used graham cracker crumbs)
? C Butter, melted

In a small bowl stire together crushed wafers and mleted butter . Stir till well combines. Press crumb mixture evenly onto the bottom and slightly up the sides of a greased 9-inch spring form pan. Set aside.

New York Filling
32 oz. cream cheese (room temp., so soft)
1 C sugar
3 Tbls. Flour
5 eggs
1/3 C whipping cream
1 tsp. vanilla extract
1 C sour cream
2 Tbls. sugar
? tsp. vanilla extract

Preheat oven to 350o

In a large bowl combine cream cheese, 1C sugar and flour. Beat with an electric mixer till smooth. Add eggs, one at a time, beating well after eachaddition. Stir in whipping cream and 1 tsp. vanilla. Pour the cream cheese mixture over the crust.

Bake at 350o for 15 minutes. Lower oven temperature to 200o and bake for 1 hour and 20minutes or till the center no longer looks wet or shiny (very important!). Remove the cake from the oven. Stir together sour cream, 2 Tbls sugar and ? tsp. vanilla extract. Spread over warm cheesecake.

Return cheese cake to the oven and bake for 15 minutes more. Remove from oven and run a knife around the inside edge of the pan. Let cool on counter.

I dont hvae a recipe but i have a tip...to prevent it from cracking and drying out...put the pan in a water bath...make sure the water never evaporates out (keep adding more) so the top will look nice and it will taste more creamy. Good luck!

This came out really well when I tried it, but this recipe is only for 2 so double or triple the ingredients if it is for a group. This would work as a basic cheesecake to add anything to, so if you'd rather, ignore the marshmallows and cover with tropical fruit or sliced banana with drizzled Dulche du Leche over it for banoffee, or whatever is your sons favourite. Honestly though, the basic cheesecake underneath is delicious, not OVERLY cheesy but quite fresh.

Ingredients
For the base
4 chocolate cookies, crumbled
For the filling
150ml/5fl oz double cream whipped
125g/4oz greek yogurt
2 tbsp soft brown sugar
For the topping
2 large handfuls of mini marshmallows



Method
1. Place the crumbled cookies into a chefs' ring.
2. In a bowl mix the double cream with the yoghurt and brown sugar.
3. Place the creamy mixture on top of the cookies and flatten out.
4. Blowtorch the sides to melt the cheesecake, and gently release the cake ring.
5. Place the marshmallows on top of the cheesecake. Blowtorch the marshmallows until just melting and serve.

New York Cheese Cake

Crust of your choice in springform pan.. (someone suggest vanilla wafers and that sounds good.. I sometimes use Oreo cookies crushed for a different taste)

Have all your ingredients at room temp

Mix
2 -1/2 lbs of cream cheese (5 packages)
1- 3/4 cup of sugar

add one at a time ( scrape down sides of bowl after each mix)

5 eggs
2 egg yolks


stir in 1/2 heavy cream


in preheated oven at 450 bake for 15 Min's.. then lower your temp to 200 for one hour...once that hour is done turn off oven and leave the cake inside for one more hour..then chill..

Cheesecake is so so the day you make it.. 24 hours later it becomes awesome.. 48 hours later out of this world so make ahead!!!!

Supprising i quite like the ones you buy in the packet. You need to whisk up some mascarpone and cream together and put it on the top. Then grate some lemon on the top. Looks like your own
