Italian Lasagna

I developed this recipe after spending some time in sorrento. There are hundreds of recipes for lasagna but this one to me and my friends is as close to authentic as I can get and still satisfy the american taste buds. Trust me you will love it!


8-10 servings 2? hours 1 hour prep

2 lbs lasagna noodles
750 g gound sirloin
500 g plum tomatoes
16 ounces ricotta cheese
8 ounces mascarpone cheese
16 ounces mozzarella cheese
1 teaspoon salt
4 tablespoons dried basil
3/4 cup extra virgin olive oil
1 cup merlot (or your favorite red wine)
2 eggs
1 teaspoon ground nutmeg

Place ricotta, mascarpone, 2 eggs and nutmeg in a bowl and beat on low until creamy. Refigerate.
Add tomatoes, basil, salt ,1/2 cup olive oil and red wine to pot and bring to boil. Reduce and simmer 1 hours Crush the tomatoes while cooking.
Bring to boil pot of water and cook lasagna noodles according to directions. Rinse in cold water and drizzle with olive oil to prevent sticking.
Brown ground beef and drain.
Add cooked beef to sauce and mix.
Preheat oven to 375.
Place a layer of noodles on bottom of 9x12 baking pan.
Cover with just enough sauce to cover noodles.
Add another layer of noodles crosswise (opposite pattern from first layer).
Add sauce again to cover.
Add another layer of noodles crosswise (opposite pattern from second layer).
Add cheese mixture from frig.
Add another layer of noodles crosswise (opposite pattern from third layer)You will have leftover noodles as 1 lb is not ehough and 2 lb is to much.
Add remainder of sauce.
Grate mozzarella and spread over top.
Drizzle lightly with olive oil and sprinkle some salt on top.
Place toothpix strategically to prevent foil from sticking to cheese.
Cover with foil and bake for 20 minutes.
Uncover and bake additional 20 minutes (note monitor this step as to not burn the cheese, all ovens are different).
Take out of oven and let rest 30 minutes to set up (this is a must otherwise it will be a mess when you serve).
Serve with a caeser salad and lots of garlic bread.

I love making my meat pasta.

Start of with some bacon and italian sausage. Then add some ground veal, turkey, pork. Let all of the meat brown. Then add some celery, zucchini, squash, carrots, onions, GARLIC. Let the veggies soften then add your tomato sauce with some paste. Cover and simmer.

Seafood alfredo. Mmmmmmm.

i cannot choose between spaghetti & meatballs or pizza....

Chicken Cacciatore. Its my best dish. You dont have to thaw the chicken and sometimes I dont. Add chicken breasts, spagetti sauce, half a beer, fresh garlic (minced up), black olives, mushrooms, oregano, parsley, garlic salt, cracked black pepper and salt.... Add all those ingredients to the crock pot, set it for 8 hrs and forget about it. The chicken comes out amazing.

A dish called penne arrabiatta. So good. It literally means "angry pasta". It's penne pasta with a bacon/tomato sauce with lots of chili powder, chopped chilies, garlic, onions and red pepper flakes. Tastes great with sausage too.

ALL OF IT!! I'm Mexican and I know how to cook some bomb-a.ss Mexican food. However...Italian food turns me on cause it's just so perfect and delicious!!

Home made squid ink pasta + seafood cream sauce (tiger prawns & scallops) with tiramisu as dessert!

My favriote is Pizza MMMMMMMMMMMMMMMM!!!!!!!!

Must I choose, each region has wonderful dishes. Saltimbocca, Parmesan Regiano baked in the oven and served with honey and nuts, Bistecca grilled, the antipasta, the grilled vegetables, the pasta, the roasted pig filled with garlic and herbs and sliced in chunks and served in a bun. Oven baked potatoes, roasted potatoes, the lovely things that they do to everything. I haven't mentioned what they do to fish. Just delicious!!!

My favorite Italian Food is everything and anything Pasta > Pasta with Marinara Sauce, Meat Sauce, Vegetables, Alio and Olio, Fish and Cream Sauce, Lasagna, Mannicotti, Gnocchi, Ravioli, Home-made Minestrone with a little short pasta.
I also love Veal Parmesan, and Eggplant Parmesan, Grilled Meats and Vegetables, Roasted Lamb, Spezzatino, Cold cuts, such as Prosciutto and salami, and Italian Picked Jardiniere, Italian olives, the great variety and the great variety of cheeses..
I also love Gelato, Italian Sponge Cake, Tiramisi, Italian Pasteries, Rum Babbas, Cannnoli, Christmas Cookies,, All Italian Cookies, Italian wines and liquers.and Italian Baci Chocolates.
And Of course love home-made Italian Pizza and Calabresse Bread.. mmmm..
I could go on and on.. love everything Italian.
