Irish Cream Fudge

Ingredients
1 cup finely chopped walnuts
4 cups granulated sugar
1 cup evaporated milk
1/3 cup light corn syrup
6 tablespoons butter or margarine
2 tablespoons honey
1/2 teaspoon salt
1/2 cup Irish Cream liqueur
1-1/2 cups (9 ounces) semisweet chocolate chips, melted

add it to cooked rice for a rice pudding type breakfast meal.

Old Fashioned Evaporated Milk Caramels
2 cups white sugar
2 cups white Karo
1/2 cup butter
2 cups evaporated milk
1 teaspoon vanilla
1 cup pecans, chopped
1/4 teaspoon salt


1. Boil sugar,salt and corn syrup to 245 degrees.
2. Stir occasionally.
3. Add butter and evaporated milk so gradually that the mixture does not stop boiling.
4. STIR CONSTANTLY!
5. Cook rapidly to 240 degrees, being careful not to scorch.
6. Add vanilla and nuts.
7. Pour into greased pan.
8. Cool before cutting.
9. Cut with heavy,sharp knife with saw-life motion.

You can use the evaporate milk to make caramel sauce for ice cream or other desserts. Just pour the milk into a sauce pan and cook on medium heat until it caramelizes and reduces into a thick, syrup.
