Ginger Chicken

Ingredients:
1 cup flour
2 teaspoons salt
2 teaspoons paprika
1/4 teaspoon pepper
2 lbs chickens, cut up into small pieces
SAUCE
1/2 cup honey
1/2 cup orange juice concentrate, thawed
1 teaspoon ground ginger

Prep:
Combine flour, salt, paprika, and pepper.
Coat chicken lightly.
Place on lightly greased baking sheet.
Bake at 350* for 45 minutes.
Remove from oven and drain.
Combine sauce ing.
Brush generously on chicken.
Reduce oven heat to 325F degrees.
Bake another 40 minutes, basting with more sauce occ.

I peel the ginger and run it thru my garlic press.

Ginger Chicken Stir-Fry:

Servings: 4
Prep Time: 30 minutes
Cook Time: 30 minutes

Ingredients
- 2 tablespoons HOUSE OF TSANG? Sesame Seed Oil or vegetable oil
- 1 pound boneless skinless chicken breast cut into pieces
- 4 cups assorted cut-up vegetables (broccoli carrots baby corn bell pepper)
- 1 cup water
- 2 teaspoons HERB-OX? Chicken Flavored Bouillon Granules
- 2 teaspoons cornstarch
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground ginger
- Hot cooked rice


Directions
In skillet over high heat, heat oil. Add chicken; stir-fry until no longer pink. Add vegetables; stir-fry 5 minutes or until tender. In bowl, combine water, bouillon, cornstarch, garlic powder, and ginger; pour over chicken. Bring to a boil; reduce heat. Simmer 5 minutes or until thickened. Serve over rice.

GINGER BAKED CHICKEN

1 frying chicken, 3 to 3 1/2 lbs., cut up
3 tbsp. all-purpose flour
1 tsp. each salt and ground ginger
1/2 tsp. paprika
1/8 tsp. white pepper
1/4 c. butter
1 clove garlic, minced or pressed
2 tbsp. candied ginger in syrup, slivered
1/4 c. chicken broth
1/2 c. sour cream
Chopped candied ginger for garnish

Coat chicken pieces lightly on all sides with mixture of flour, salt, ginger, paprika, and pepper. Melt butter in a 13 x 9 inch baking pan at 350 degrees as oven preheats. Remove pan from oven. Add garlic and stir to distribute it evenly through butter. Place chicken pieces, skin sides down, in a single layer in pan. Turn skin sides up. Drizzle with ginger in syrup.

Bake at 350 degrees until chicken is tender and well browned, 50 to 55 minutes. Remove chicken to a warm serving dish; keep warm. Pour off and discard fat from baking pan. Add broth to pan, stirring to blend in browned bits from pan bottom. Boil, stirring, until syrupy. Remove from heat. Mix in sour cream. Stir over low heat just until smooth and hot (do not boil). Pour sour cream mixture over chicken. Garnish with chopped candied ginger.

There are several variations on Ginger Chicken, some stir fried, some grilled, some baked. With that in mind I give you my favorite. It's just the right time of year for this dish, and sure to please.

Honey Ginger grilled Chicken

1/2 cup honey
2 tablespoons soy sauce
2 tablespoons dry white wine
2 tablespoons lemon juice
2 green onions minced
2 cloves garlic minced
1 teaspoon ground ginger
1 teaspoon salt
1 teaspoon freshly ground black pepper
6 boneless skinless chicken breasts ( or whole cut up chicken)

Stir together the honey, soy sauce, wine, lemon juice, onions, garlic, ginger, salt and pepper.
Place chicken in a shallow baking dish and cover with honey marinade.
Cover and chill 8 hours.
Remove chicken from marinade.
Grill covered with lid over medium.
Cook for 6 minutes on each side.
