My favorite is a black bean and rice salad and it is very easy:

4 cups cooked rice
2 cans black beans, rinsed
1 can whole kernel corn
1 cup salsa
1/2 cup mayo
chopped cilantro
salt and pepper

mix all together in a large bowl and chill for at least an hour.

Spicy Black Bean Dip

1 can (15 ounces) black beans, undrained
1 teaspoon McCormick? Chili Powder
1 teaspoon McCormick? Ground Cumin
1/4 teaspoon McCormick? Garlic Salt
1/4 teaspoon McCormick? Oregano Leaves
1/8 teaspoon McCormick? Ground Red Pepper
1 cup chopped tomatoes


1. Drain beans, reserving 2 tablespoons liquid. Rinse and drain beans. Mix beans, reserved liquid, chili powder, cumin, garlic salt, oregano and red pepper in blender or food processor; cover. Process until beans are coarsely chopped. Transfer mixture to small saucepan.
2. Cook on medium-low heat 5 minutes, stirring occasionally. Add tomatoes; cook 5 minutes, stirring occasionally.
3. Serve with baked or low fat tortilla chips or cut-up fresh vegetables.


Black Bean Soup
INGREDIENTS
2 tablespoons olive oil
1 cup chopped white onions
1 teaspoon chopped fresh ginger
1 teaspoon chopped fresh garlic
1/2 teaspoon cayenne pepper
1 teaspoon dried thyme
3/4 teaspoon allspice
1/8 teaspoon celery salt
3 cups vegetable broth
1 (14.25 ounce) can tomato puree
2 (16 ounce) cans refried black beans
1/8 teaspoon black pepper
1 teaspoon white sugar
2 (15 ounce) cans black beans, rinsed and drained
1/4 cup fresh lemon juice
1 (8 ounce) container sour cream
DIRECTIONS
Heat the olive oil in a large saucepan over medium heat, and cook the onion until tender. Mix in ginger and garlic, and season with cayenne pepper, thyme, allspice, and celery salt. Pour in the broth. Mix in tomato puree, refried black beans, black pepper, and sugar. Cook and stir until heated through.
Mix the remaining black beans and lemon juice into the soup. Continue cooking until heated through. Top each serving with a dollop of sour cream.

Use like you would use any other bean, but here's a few (468) for ya

It is so funny that you ask this question! I just asked my friends this the other day and my friend found this online for me...it is really very yummy! It is kind of a cooler weather recipe but it was cold and rainy here the other day and this just hit the spot!

Black Bean and Rice Casserole

honey you can use black beans in the same way as you would the white bean. i like then in a bean soup kind of thing i cook them down to a thick pasty dish and just enjoy them

Drain one can of black beans. Pour in a can of Rotel Tomatoes. Chop a bell pepper and add along with one tablespoon of lime juice.
Chill. This doesn't look great, but it's a very good cold bean salad.

Those soups sound wonder! For summer you might like what:
I am eating ( my high healthy version of pasta/black bean salad) right now!!!!!

Ingredients: 1 pound of whole wheat pasta
1 package of frozen "southwestern" style frozen veggies .... that is the kind with black beans, corn , and green and red bell peppers and onions.

1 Tablespoon of oil and vinegar dressing ( I make my own because I am allergic to garlic...) you can use "store bought" if you like; just don't use too much.

1/4 cup of low sodium V8... we are also on a low salt regimen
1 Tablespoon of Catalina dressing.

Bring a large pot of water to boil. add pasta and cook until tender.
Put frozen veggies in a large bowl. When the pasta is cooked use that water to thaw the veggies... drain all in large colander.

Put veggies and pasta in large bowl. Add V8, oil and vinegar and Catalina. Toss well!.

Serving ideas. Serve on a bed of torn Romain lettuce
with a choice of ONE or TWO of these topping suggestions:
cottage cheese,
left over chicken, or lean roast beef.
slices of avocado, hard boiled eggs, diced cheese
tuna or shrimp.

I make a large batch. It keeps in the fridge very well and with different topping we can have a variety of cool summer meals.
