Shawn, it really depends on the dinner and the season, If you have a heavy dinner planned, then a light dessert is warranted, but it also depends on the season it is served in...such as if it is in summer...a array of melon balls served with a sprig of mint is great, but would seem too cold for winter...but in the winter a warm apple betty is good..although it would be too much in the summer...you want to compliment the meal and the season with a taste delight. if you are not sure, cheesecake is always a great dessert that can be dressed up in any season with a fresh macadema caramel sauce or fresh berries in a rum-conac sryup...a great way to find some great recipes is watch the cooking channels and fine dining channels which show you lots of great recipes and tips to make them look great. Might I also add the fact is it is the way it looks and the presentation that makes or breaks a good dessert..you can take the simplist pudding and make it elegant with fruit put in a wine glass in layers compared to slapping it into a bowl and putting it on the table...see what I mean...hope it helps
