Do i have to add eggs to my cheesecake?!


Question:

Do i have to add eggs to my cheesecake?

Can i just add everything else without the eggs? Is it needed to make a cheesecake or can it be an option..like adding almond extract instead of vanilla extract?


Answers:
A traditional cheesecake must have eggs - that's what makes the filling light and fluffy, like a souffle. There are alternative recipes that use gelatine or whipped topping, but they don't taste the same or have the same mouth feel. If you are allergic to eggs, or don't eat them as part of a vegan diet, you can find alternative recipes all over the internet. Good cooking!

Eggs are a binder and allow the cake to "set up" you can do it without this and you probably wont need to bake it just chill it well depending on your recipe

EGGLESS CHEESECAKE

1 graham crust
3 (8 oz.) cream cheese, softened
1 1/2 c. sugar
1 tbsp. cornstarch
1 tbsp. vanilla
1 tsp. vanilla
1 pt. sour cream

Press crust into 9 inch spring pan or 9 inch square pan.
Mix cream cheese, 1 cup sugar, cornstarch, and 1 tablespoons vanilla. Pour into shell and bake at 350 degrees for 35 minutes. Cool 5 minutes. Increase oven heat to 400 degrees.

Mix 1/2 cup sugar, sour cream, and 1 teaspoon vanilla. Pour over cheese mixture and bake 10 minutes, cool. Store in refrigerator.

eggs are bad anyways look for a egg subsitute

I know of nothing but a substitute other than products like egg beaters. I have heard that tofu is also an option but, have never tried it. You may want to find a vegan cheesecake recipe to try.

Traditional cheesecake is a custard, and so must have eggs. But there's many eggless options and recipes - won't taste like a regular cheesecake (not as rich) but will do for those who can't or won't eat eggs!

You could use a egg substitute or you could try this recipe. Im sure you could exchange the extract.


EGG SUBSTITUTE

This equals 2 eggs. 1 tbsp. nonfat dry milk 1 tsp. vegetable oil Dash of salt (opt.) 1 DROP yellow food coloring
Mix well with fork without beating. Use immediately or put in container, seal well and freeze.

Vegan Cheesecake:
INGREDIENTS
1 (12 ounce) package soft tofu
1/2 cup soy milk
1/2 cup white sugar
1 tablespoon vanilla extract
1/4 cup maple syrup
1 (9 inch) prepared graham cracker crust
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a blender, combine the tofu, soy milk, sugar, vanilla extract and maple syrup. Blend until smooth and pour into pie crust.
Bake at 350 degrees F (175 degrees C) for 30 minutes. Remove from oven and allow to cool; refrigerate until chilled.

You might compromise and make it with egg whites, leaving out the yolks. It would then be lower in cholesterol. I haven't tried this, but suspect it would be quite close, though not quite as rich.

eggs are very important to a cheesecake, there's no way around it. They have a protein which gives it structure and combine the ingredients well.
It is important to remember that when baking a cheesecake, use the eggs (and all ingredients) at room temperature and use X-large eggs
