What's an easy but interesting vegetarian dish that can be prepared quickly?

I'm not vegetarian but my bf is. I prepare two meals when i cook, one for me and a vegatarian one for him. I've gotten to be a good vegatarian cook but I need some new ideas cause he is getting tired of the same things. any ideas?


Answers:
Eggplant and mint sandwitches:

Flour and fry eggplant slices. Serve with mint leaves between artesinal bread, with olive oil. For lacto-ova types, add feta cheese.

Gnocchi:
These are great. Boil em up and serve with a fresh tomato/basil recipie. If you are inclined add parmisan cheese.

Beans and rice: Thousands of variants, but one called moors and christians stands out.

1 can black beans
1 cup rice
1 cup chopped onion
1 cup chopped green pepper
2 tsp chopped garlic
2 tsp cumin
1 tsp thyme
1/2 tsp red pepper
1 tsp oregano
1 tsp olive oil
1 can tomatoes
2 cups water
1 table spoon apple cider vinegar
1/2 tsp black pepper

Ignore the ingredient list, it changes depending on who you ask. The main parts are black beans and white rice. To make according to the recipie above, sautee the onions, pepper, spices and garlic for about 5 mins. Add tomatos, rice, beans, vinegar and water and bring to boil. Cover and simmer for 20 mins at reduced heat.

Other options include using lime juice instead of vinegar, omitting or adding spices, etc. This is a cuban dish and there are loads of variants.

Pernod and tomato soup:

1 can of tomato, chopped
2 cloves garlic + extra
Soft white bread
olive oil
2 shots of Pernod
1 cup water
salt, pepper to taste

Chop and sautee the cloves of garlic. Be sure to remove the green part in the middle. Add the chopped tomato and 1 cup water. Boil at med temp for about 30 mins to break up the tomato. Add pernod and reduce. Use one shot or two as you see fit. Adjust seasonings and serve about 10 mins after you add the pernod.

While the tomato is cooking, toast the bread, rub with garlic, cut into cubes and saute briefly in hot oil. Scatter these on the surface of the soup as it is served or allow the guests to do it themselves.

Pasta! And some cheese some herbs whatever. It will seem so great when it's just pasta. plus it's fast to make

I have a great recipe for you! And easy to make as well. It's a very colorful and delicious salad. Basically you boil some rice, but not the mushy type - try a pre-boiled one and follow directions. Then chop some red, yellow/orange and green peppers and toss in some canned corn ans some green peas, either boiled from the freezer or fresh and boiled lightly.

That's it. Easy to make, eye-candy also, refreshing and light. And it tastes good too.

I am on a bit of an Asian kick right now, but vegan sushi is quick and easy once you get the ingredients, and you can put your favorite veggie in the middle.

Breakfast burritos (for any time of the day):

get a pack of flour tortillas and a bag of potatoes o' brian. fry up the potatoes and add faux sausage of hot dog cut up and wrap them up.

I've been slowly documenting things. But there are no real descriptions, just experiment. There is a basic tomato sauce along with other items.

Here are a few easy (and practical) vegetarian recipes, most of which you could easily add your own meat to for your dinner:

* Quesadillas - tortilla with cheese, pepper, and/or onions. Add some chopped tomato, lettuce, sour cream and salsa!

* Veggie Ranch Pizza - Top a pre-made pizza crust with a layer of three-cheese ranch dressing, cheese, and vegetables (I recommend carrot, tomato, broccoli). Bake until melted for a delicious twist on pizza.

* Tostada Tacos -- Throw a tostada in the oven topped with refried beans and cheese. After it melts, add lettuce, salsa and sour cream.

* Baked potato topped with sour cream, butter and/or veggies (Green Giant has single-serving broccoli with cheese sauce that goes well with it)

* Tater Tot Hot Dish - Put one layer of frozen tater tots in a baking dish; mix in a can of Cream of Mushroom soup and a splash of milk; add drained whole kernel corn, and top with cheese. Bake at 450 until melted (about 30-40 minutes). For a meaty version, try adding hamburger.

* Make your own Mongolian Grill with pasta and a bag of frozen vegetables. Toss it all in a frying pan with some flavored sauces/oils (soy sauce, hoisin sauce, sesame oil, garlic, etc.) Serve with a side of rice.

* Tomato soup and grilled cheese -- Brush the bread with olive oil and garlic powder (or crushed garlic) for a little variety
