Father's Day Cook Out ideas?

We are hosting a Father's Day lunch at our house this year.
We would like to cook out, and were looking for some great recipes or ideas besides the plain old hamburger/hot dog.

Do anyone have any tried and GOOD food recipes?

Kabobs always work:
FIESTA BEEF KABOBS

1/2 env. (1/4 c.) dry onion soup mix
2 tbsp. sugar
1/2 c. catsup
1/4 c. vinegar
1/4 c. salad oil
1 tbsp. prepared mustard
1/4 tsp. salt
Dash bottled hot pepper sauce (Tabasco)
1 1/2 lb. beef chuck roast, cut into 1" cubes
Instant unseasoned meat tenderizer
1 green pepper, cut in pieces
1 sweet red pepper, cut in pieces

In saucepan combine first 8 ingredients and 1/2 cup water; bring to boiling. Reduce heat, simmer 20 minutes. Cool. Add meat; toss to coat. Refrigerate overnight; drain meat, reserving the marinade. Use tenderizer on meat according to label directions. Thread meat and peppers on skewers. Cook 20-25 minutes turning and brushing with marinade.

GRILL - TOP TOMATOES

Cut tomatoes in half. Brush cut surfaces with Italian salad dressing. Sprinkle with salt, fresh ground pepper and basil. Place cut side up on aluminum foil or greased grill over hot coals about 10 minutes (don't turn) or until hot through

I'm not offering recipes, but why not ask the man of the day what he would like and then go from there. If there are two dads in the house, make what they both want. Simple.

I like the kabob idea cuz it is good and pretty easy. Maybe some beef and chicken kabobs with onion and peppers. Then some grilled corn and maybe some roasted potatoes. For desert you can grill up some pineapple rings and serve with vanilla ice cream and hot fudge on top.

Chicken drumsticks - here's 2 marinades i've used before

Chipotle Marinade for Chicken (Makes enough for 12 drumsticks)

* 1 cup tomato paste
* 1 1/2 cups chicken broth
* 4-5 chipotle peppers in adobo sauce, minced
* 4 garlic cloves (or to taste) minced
* 1/2 cup minced onion
* 2 teaspoons salt
* 1 teaspoon ground black pepper

Citrus Herb Marinade for Chicken (Makes enough for 12 drumsticks)

* 3/4 cup olive oil
* 1/4 cup orange juice
* 1/4 cup lemon juice
* 3 tablespoons lime juice
* 2 teaspoons lemon pepper
* 1/4 - 1/2 cup finely chopped fresh herbs of your choice

Here is a great recipe for Strawberry Pie and a recipe for a steak marinade. These are both great for cookouts! I actually use both recipes all the time and they are delicious!

Bronco Burger
INGREDIENTS

* 5 fresh jalapeno peppers
* 4 pounds ground beef
* salt and pepper to taste
* 1 egg
* 1/4 cup steak sauce, (e.g. Heinz 57)
* 1/4 cup minced white onion
* 1 teaspoon hot pepper sauce (e.g. Tabasco?)
* 1 pinch dried oregano
* 1 tablespoon Worcestershire sauce
* 1 teaspoon garlic salt
* 1/4 cup crushed Fritos? corn chips
* 8 large potato hamburger buns
* 8 slices pepperjack cheese

DIRECTIONS

1. Preheat a grill for high heat. When the grill is hot, roast the jalapeno peppers until blackened on all sides. Place in a plastic bag to sweat and loosen the blackened skin. Rub the skin off, then seed if desired, and chop.
2. In a large bowl, use your hands to mix together the ground beef, salt, pepper, egg, steak sauce, onion, hot pepper sauce, oregano, Worcestershire sauce, garlic salt and Fritos?. Divide into 8 balls, and flatten into patties.
3. Grill patties for 10 to 15 minutes, turning once, or until well done. I always drink one beer, then flip, drink another beer, then remove from the grill and place on buns. Top each one with a slice of pepperjack cheese and pig out!
