BEEF STROGANOFF AND NOODLES

1 1/2 to 2 lbs. sliced sirloin
6 tbsp. butter
1 c. sliced onions
1 clove garlic
1 1/2 c. sliced mushrooms, (fresh)
3 tbsp. flour
2 tbsp. ketchup
1/2 tsp. salt
1/2 tsp. pepper
2 c. water
1/4 c. cooking sherry
1 1/2 c. sour cream

Sear beef, garlic, mushrooms in butter. Remove from heat. Add flour, salt, pepper and ketchup. Add water, wine simmer until almost absorbed. Add sour cream and heat through before serving.

HOMEMADE NOODLES
1 c. flour
2 tbsp. milk
1 egg
1 tsp. salt

Mix above until stiff. Roll with pan. Cut with pizza cutter. Dry for 2 to 3 hours. Boil for 10 minutes. Serve hot with stroganoff

1 cup beef broth or stock

Brown the beef, remove from pan.

add flour, tomato paste and broth to hot pan and whisk, making sure to get up any brown bits and to make the sauce thin.

Add beef and sour cream, stir and simmer covered for 15 minutes. Serve over cooked rice or egg noodles ( usually two cups of noodles before cooking or 1 cup uncooked rice). Add dill salt and pepper to taste before serving VIOLA!

1 pound beef tenderloin
Coarse salt and ground pepper

1 medium onion, thinly sliced
1 pound white mushrooms, sliced 1/2 inch thick
1 cup reduced-sodium canned beef broth
1 tablespoon Dijon mustard
1/2 cup sour cream
Chopped fresh dill, for garnish
Directions
Slice beef into 2-inch-long strips, each about 1 inch wide and 1/4 inch thick. Season generously with salt and pepper. Heat 2 tablespoons oil in a large skillet over high heat. Brown meat in two batches, about 1 minute per side; remove from skillet, and set aside.
In same skillet, heat remaining tablespoon oil over medium heat. Add onion; cook, stirring occasionally, until lightly browned, 5 to 7 minutes. Add mushrooms; cover. Cook until just tender, 6 to 8 minutes. Add broth; simmer, uncovered, until liquid has thickened, 6 to 8 minutes.
Stir mustard into mushroom mixture in skillet. Return beef to skillet; cook over medium-low heat until heated through, 1 to 2 minutes. Remove from heat, and stir in sour cream. Season with salt and pepper, as desired. Serve immediately, garnished with chopped dill.

1lb ground beef, small container of sour cream, 1 cup of egg noodles, and chopped onion if desired. cook noodles till tender. cook ground beef till done. drain beef and noodles. add sour cream and onion to beef. mix well. add mixture to noodles. mix well. add salt and pepper to taste and enjoy.

1 (4 ounce) can sliced mushrooms, drained
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 cup beef bouillon or consomme
3 tablespoons tomato paste
2 tablespoons flour
3/4 cup sour cream, mixed with the flour

1. Brown ground beef in large skillet; add onions, garlic and mushrooms.
2. Saute until onion is golden brown.
3. Put in Crock Pot with all remaining ingredients except sour cream and flour.
4. Stir thoroughly.
5. Cover and cook on low 6-8 hours (or on High 3 hours).
6. Stir in sour cream and flour 1 hour before serving.
7. Serve over hot buttered noodles or rice.
