will watermelon conntinue to ripen even after it is cut open....?
( i cut open a watermelon today it was a little under ripe)

no, but you can do some things to make it easierto eat.
cut cubes and toss sugar syrup, lime juice or rose water.
use it in a salad with fetta cheese, black olives, red onion and chervil - good with poached fish
puree it and serve with vodka in a cocktail
wrap it in cling film'leave on a dish with a banana this ripens it as bananas ripen any fruit.

I don't believe that it will continue to ripen!!!
But you can still use it make some good drinks with it.
Blend it with sugar and lemon juice, or add it to an iced tea. Or make frozen drinks.
