How do you make chocolate truffles balls?

I have to make truffles for a school project!! I just made the ganache but when forming the balls they went flat as soon as i put them on the parchment paper!! They were definitely cold enough too! i had put them in the fridge overnight! But when they hadn't firmed up enough I had put them in the freezer for about 5 hours! What should I do? PLZ help! i have to bring them in on thursday!

CANDY BOX TRUFFLES

12 sqs. (12 oz.) semi-sweet chocolate, coarsely chopped
2/3 c. whipping cream
1/4 c. butter
2 beaten egg yolks
Confectioners' coating, melted (according to pkg. directions)
Pecans, whole or chopped (optional)
Chocolate sprinkles (optional)
Powdered sugar (optional)
Unsweetened cocoa powder (optional)

In heavy 2 quart saucepan combine chopped chocolate, half the whipping cream, and butter. Cook and stir over low heat 10 minutes or until chocolate melts. Remove from heat; gradually stir about half the hot mixture into beaten yolks. Return yolk mixture to pan. Cook and stir over medium heat 2 minutes more or until thickened; remove from heat. Stir in remaining cream.
Chill about 1 hour or until mixture is completely cool and smooth, stirring occasionally; transfer to Small Mixing Bowl. Beat with an electric mixer on medium speed 2 minutes or until slightly fluffy. Apply Seal; chill 15 minutes or until mixture holds its shape. For each truffle, drop a heaping tablespoon of the mixture onto a waxed paper-lined baking sheet. Chill 15 minutes or until firm. DO NOT OVER CHILL. Roll each mound into a 1 1/2 inch ball. Chill 20 minutes more.

Remove chilled truffles, one at a time, from refrigerator and dip into melted coating. if desired, top with pecans or chocolate sprinkles. Let stand on waxed paper-lined baking sheet in refrigerator or a cool place until dry. Or, roll chilled truffles in powdered sugar or cocoa. If desired, use decorator bag and writing tip to pipe melted coating over truffles.

Store truffles in sealed containers.

Makes 28 truffles.

Easy Chocolate Bourbon Truffles

1 can (14 ounces) sweetened condensed milk
3 cups semisweet chocolate chips
1 tablespoon vanilla extract
2 tablespoons bourbon
1/2 to 3/4 cup finely chopped pecans
granulated sugar, unsweetened cocoa, or very finely chopped pecans

PREPARATION:
Combine chocolate chips and sweetened condensed milk in a saucepan over low heat. Heat, stirring, until melted and smooth; remove from heat. Stir in the vanilla, bourbon, and 1/2 to 3/4 cup pecans. Transfer to a small bowl.
Cover and chill for 3 to 4 hours, or until mixture is firm.
Working with fingertips, shape into 1-inch balls; roll in finely chopped pecans, sugar, or unsweetened cocoa. Place on a tray or baking sheet, cover loosely, and chill for at least 1 hour. If desired, put each truffle in a decorative fluted paper or foil cup and keep in tightly covered container in the refrigerator until giving or serving. Keep these refrigerated, tightly covered.

Sarah, I am off to buy ingredients that I don't have on hand. I will try both listed so far. Yeah, I'm that kind of sacrificial pal.

These are absolutely divine.
Easy Oreo Truffles
1 pkg -18oz Oreo chocolate sandwich cookies, divided
1pkg (8oz cream cheese, softened
2 pkg ( 8oz each) Baker's semi sweet baking
chocolate, melted
Crush 9 of the cookies to fine crumbs in food processor; reserve for later use (I use a blender or you can put them in a resealable plastic bag and use a rolling pin to crush them.)
Crush remaining 36 cookies to fine crumbs; place in medium bowl. Add cream cheese; mix until well blended. Roll cookie mixture into balls, about 1 inch in diameter. Dip balls in chocolate; place on wax paper- covered baking sheet.
Sprinkle with reserved cookie crumbs.
Refrigerate until firm, about an hour.
Store covered in refrigerator. Makes approx 40-50 truffles
You will have some leftover cookie crumbs. I just put them in a freezer bag and put them in the freezer. We like to use the crumbs with ice cream.
For easy dipping, place truffle ball in melted chocolate to coat; Lift truffle from chocolate using two forks (this will allow extra chocolate to run off) before placing on wax paper
I also substituted mint Oreo. I had to tweak it a little bit because there are less oreos in the 18 oz pkg.
Oh yea, I'm not too crazy about cream cheese, the Oreos and chocolate disguise the taste.

You have to keep the chocolate cold. It is to warm and is "melting" Your hands also warm up the choclate causing it to "melt" Don't know where you live, but I used to roll them outside when I lived in Wyoming.
