The word "carnevale" (carnival) derives from Latin "carnem levare", literally meaning "getting rid of meat".
That's in theory, since almost nobody follow that tradition.

Its called "lent". For 40 days Christians from around the world (not only Italians) sustain from eating meat (and some devout Christians also do not eat dairy) to commemorate the 40 days that Jesus Christ fasted in the desert. Its the beginning of the easter period.
