Any good recipes to impress bf?

the last time i cooked for him, i copied what my mom cooked(noodles, pot stickers and some eggrolls) but it was a TOTAL disaster. i think my bf has a fear of my cooking =/. i want to impress him tonight by cooking food from his homeland. what are some good mongolian recipes i can make for him? i thought about asking his mom, but i think she's those traditional type of moms who want their sons with women who can cook without help. any recipes?

if he is try making some chilaquiles or tacos
i like them

Mongolian Beef

1 lb beef flank steak, sliced thin across the grain
4 cups peanut oil for deep frying
1 Tbsp light soy sauce
1 Tbsp dry sherry or rice wine
1/2 tsp freshly grated ginger
1 Tbsp peanut oil
2 cloves garlic, sliced thin
4 green onions, sliced Chinese style
1 tsp Hoisin sauce
1/4 tsp ground white pepper

Marinate cut meat in marinade for at least 15 min. Drain marinade well and separate meat into individual pieces.
In a wok or deep pan, heat deep frying oil to 375 degrees(Fahrenheit). Add meat all at once and stir to separate. Remove after 1 min. and allow meat to drain.

Heat wok again (after removing oil) and add oil for chowing**. Add garlic and green onions and chow for just a moment. Add Hoisin sauce, pepper and meat. Chow until all is hot then serve.

** "Chowing" is food that is tossed about in hot pan with very little oil; like sauteing.

i would be hesitant to try competing with his mum in cooking... maybe you should cook him something completely different so he can't make comparisons, like a nice roast or a steak and some salad... i know you wanted mongolian recipes but I don't have any, so here's one from my fave chinese cookbook, it's super tasty... although probably not so healthy on account of the frying.

gwoo lo yook - crisp fried pork with sweet sour sauce

the pork can be fried once then set aside with the ingredients for sauce prepared beforehand. at serving time make the sauce and fry the pork briefly once more

500g/1lb pork fillet or pork chops
1 tbs light soy sauce
1 tbs chinese wine or dry sherry
1/2 tsp salt
1/4 tsp pepper
1/4 tsp 5 spice powder
1 cup plain flour
3/4 cup warm water
1 tbs peanut oil
1 egg white
extra peanut oil for deep frying

if using chops remove the rind, cut pork into 1/2 inch slices, then into 1 inch squares. mix with soy sauce, wine, salt, pepper and 5 spice powder. refrigerate while preparing batter.
mix flour and warm water to a smooth batter with a wooden spoon, stir in oil, allow to stand for 30 minutes. beat egg white until stiff and fold in.
heat oil (works fine in a wok, or a fryer if you have one). dip pieces of pork in the batter and fry a few at a time over medium heat until pork cooked and batter golden. drain on paper towel and set aside.
make sauce.
shortly before serving, reheat the oil and fry pork again, a few pieces at a time, on high heat for just a few seconds. the second frying makes the batter really crisp. drain on more paper towel, once all is fried arrange on plate and pour over hot sauce. serve immediately, nice with plain rice.

sauce:
1 tbs light soy sauce
1 tbs chinese wine of dry sherry, optional
3 tbs tomato sauce
2 tbs white vinegar
2 tbs white sugar
3/4 cup water
1 tbs cornflour
1 tbs water
1 small onion
2 tbs peanut oil
1 clove garlic, crushed
1/4 tsp finely grated fresh ginger
1/2 cup sliced water chestnuts
1 red capsicun, diced
3 tablespoons frozen or fresh peas
2 tbs preserved melon shreds, optional (i can't get these so leave them out)

combine soy sauce, wine, tomato sauce, vinegar, sugar adn water in a bowl and stir until sugar disolves.
mix cornflour smoothly with about 1 tbs cold water.
peel onion and cut into 1/4's lengthways, then each quarter across into 2. seaparate layers.
heat oil, add garlic, giner and all the vegatables and fry for 2 minutes. add combined sauce mixture, bring to boil, then stir in cornflour and cook, stirring constantly, until thickened. remove from heat and stir in melon shreds if using.
