Answers:
Baby Spinach Omelete

2 eggs
1 cup torn baby spinach leaves
1 1/2 tablespoons grated Parmesan cheese
1/4 teaspoon onion powder
1/8 teaspoon ground nutmeg
salt and pepper to taste

In a bowl, beat the eggs, and stir in the baby spinach and Parmesan cheese. Season with onion powder, nutmeg, salt, and pepper.

In a small skillet coated with cooking spray over medium heat, cook the egg mixture about 3 minutes, until partially set. Flip with a spatula, and continue cooking 2 to 3 minutes. Reduce heat to low, and continue cooking 2 to 3 minutes, or to desired doneness.

Spanish Potato Omelet

1/2 cup olive oil
1/2 pound potatoes, thinly sliced
salt and pepper to taste
1 large onion, thinly sliced
4 eggs
salt and pepper to taste
2 tomatoes - peeled, seeded, and coarsely chopped
2 green onions, chopped

In a large frying pan or skillet, heat olive oil over medium-high heat. Sprinkle potatoes lightly with salt and pepper. Cook until golden brown and crisp.

Once the potatoes are golden, stir in the onions. Cook, stirring occasionally, until onions soften and begin to brown.
Meanwhile, beat eggs together with salt and pepper. Pour eggs into pan and stir gently to combine. Reduce heat to low and cook until eggs begin to brown on the bottom.

Loosen bottom of omelet with a spatula, invert a large plate over the pan, and carefully turn the omelet out onto it. Slide the omelet back into the pan with the uncooked side down. Cook until eggs are set. Garnish omelet with tomato and green onion and serve warm.

EGGPLANT AND TOMATO OMELETTES

1 med. eggplant
Salt
1 med. onion, finely chopped
3 med. tomatoes, peeled, chopped
2 tbsp. tomato paste
1/8 tsp. seasoned pepper
1/4 c. olive oil or salad oil
1 clove garlic, minced or pressed
1/4 c. finely chopped parsley
1/2 tsp. Italian herbs

OMELETTES:

8 eggs
Ground nutmeg
3 tbsp. water
4 tbsp. butter
Salt
1/2 c. shredded Parmesan cheese

Cut unpeeled eggplant in 1/2" cubes. Spread on paper towels, sprinkle with salt. Let stand 20 minutes. Blot surface. Brown eggplant in heated oil in frying pan. Mix in onion; cook until soft. Add garlic, tomatoes, parsley, tomato paste, herbs and pepper. Cover, reduce heat. Simmer until eggplant is tender. Uncover, cook until most of liquid is gone. Salt to taste.
For each omelette, beat 2 eggs at a time, with 2 teaspoons water, dash of salt and dash nutmeg. Heat 1 tablespoon butter in omelette pan over medium heat until foamy. Pour in egg mixture. As soon as edges begin to set, slide spatula under, lifting and tilting pan so liquid runs underneath. Continue until no liquid remains, but top is moist. Spoon 1/2 cup sauce onto omelette; sprinkle with 2 tablespoons cheese. Loosen omelette, slide onto warm plate, folding into thirds. Spoon sauce over. Makes 4 omelettes.

CHINESE OMELETTES

1/2 c. minced, cooked pork, beef or chicken
1/2 c. minced water chestnuts
1/2 c. minced mushrooms
8 eggs
4 tsp. sesame oil
Soy sauce or tamari sauce

Prepare meats and vegetables. Beat 2 eggs for each omelette. In a wok or skillet, heat 1 teaspoon of the sesame oil. Add eggs. Sprinkle with 2 tablespoons each meat, water chestnuts and mushrooms. Cook over low heat until omelette is moist on top. Sprinkle with soy sauce. Roll up. Transfer to plate. Repeat for remaining 3 omelettes

Ingredients:

1 1/2 teaspoons each of butter and peanut oil or vegetable oil
3 beaten eggs
1/4 cup cooked, crumbled bacon
1/2 cup blanched or steamed spinach (remove liquid before adding to omelet or cover and cook in microwave until wilted)
1-2 ounces of real Swiss cheese (1/4 - 1/2 cup)
Salt and pepper to taste
1-2 dollops of sour cream
Instructions:

Heat a 7-10 inch egg pan over moderate heat (the smaller the pan, the thicker the omelet)
While the pan is heating, beat the eggs in a mixing bowl with a wire whip until blended but not frothy
When the pan is hot enough to sizzle a drop of water, add the butter and oil
When the butter stops foaming, whip the eggs a couple of times and pour into the pan
Let the eggs sit until they begin to cook around the edges
Lift the edges of the eggs with a rubber spatula and tip the pan to allow the liquid to run underneath
Repeat this process until the top is thickening and very little liquid egg remains
Add the bacon, Swiss cheese and blanched spinach across the bottom of the omelet and add salt and pepper, if desired
Fold in half and slide onto plate
If serving two, cut in half before sliding onto plates
Garnish with a dollop of sour cream

The beauty of omlets is that they're pretty good no matter what you put in them. Mix your eggs in cup/bowl with a nice pour spout. Add just a splash of milk and whatever spices you like (salt, pepper, garlic salt, chili powder). I like to saute some onion, bell pepper, mushrooms, and artichoke hearts seperately and fill my omlet with that and some grated mozzarella or jack cheese.

Ham and Cheese Omelet Casserole

INGREDIENTS
8 eggs
1 cup milk
salt and pepper to taste
2 cups diced ham
1 cup shredded American cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Beat eggs in a large bowl, making sure that they are mixed very well and have a 'frothy' top. Add the milk, salt and pepper. Mix well. Stir in ham, then add cheese pieces and stir well. Pour mixture into a well greased 4 quart casserole dish and bake in the preheated oven for 50 to 60 minutes or until top is lightly browned.

My fave omelet to make is a Mexican omelet. I got the recipe idea from recipezaar.com, but I tweaked it to my tastes. I add in salsa, fresh chopped green onions, cheese, and parsley. I also add in salt and pepper to taste and it is so good! I hope you will try it. It is definitely different, but worth it! Yum! Have a Blessed day! :)

you can add just about anything... ham, bacon, olives, mushrooms, all kinds of cheese, onions, peppers, the list is endless... pick your favorite and whip it together.

My favorite is Green Chili Cheese Bacon Omelette. Whisk 3 eggs well. Add about four slices of crisp bacon crumbles. Pour this mixture into your hot pan. As the eggs begin to set add shredded cheese ( your favorite) and fold the omelette. Top with heated green chili and serve.

You can make a good omelet by just cutting up some of your favorite vegetables and mixing it in with the eggs.

I don't think there is a limit on good omelets. Here's one I do for my wife on our anniversary. Lobster and asparagus.

3 eggs lightly beaten with
2 Tbl. spoons sour cream and
2tbl. spoons champagne.
These should all be at room temp.

Steam asparagus until tender.

Hollandaise sauce.

3 egg yolks well beaten
3 Tbl. butter
squeeze of lemon juice

Melt butter until bubbling slightly
Whisk egg yolk with one hand while SLOWLY pouring melted

Cook omelet until firm but moist. I hate overcooked eggs.
Fill with asparagus and fold, pour hollandaise over all. Serve with orange juice and champagne on a tray, in bed.

works well with shrimp too.
