Chips.
2kg Large potatoes, peeled.
Vegetable oil for deep frying.
I() Wash and thoroughly dry potatoes and cut length-ways into 10mm sticks.
(II) Heat oil and lower chips into the pot a few at a time into moderately hot oil. Cover and cook for about 4 minutes, or until pale golden.
(III) Remove and place on paper towels. Repeat with rest.
(IV) When ready to serve reheat oil, and cook again in batches, until crisp and golden. Drain on a paper towels.
Note.
Potatoes needn’t be in sticks and at the end of step 2 they can be stored refrigerated several hours ahead or wrapped and frozen.

The way we do it at the restaurant I work act consists of these steps:

Cut 8 inch corn tortillas in to four sections
deep fry for about thirty to fourty seconds
take and lay them on a piece of paper towel and before all of the grease absorbes sprinkle with a garlic salt or seasoning of your choice.

They are extremely addicting.

potato chips: THINLY slice, then fry in hot oil. Will fry up very quickly. Salt.
Try sweet potato chips, sprinkle with salt and a little sugar

Put your roasting dish in oven and set to 200 degrees C. While it's getting hot peel potatoes and cut into the size you want. Drench them in cold water and prepare any coating you want. (Try this : 2 teaspoons chicken stock powder, half cup flour, two teaspoons paprika. Mix well.) Remove chips and drain. Press on a tea towel until they are dry. Tip into large bowl and add two tablespoons olive oil or similar cooking oil. Shake chips until oil coated and then tip coating on and shake again. Tip coated chips onto roasting dish and leave 20 minutes. Turn and leave 10 minutes. Change oven to Fanbake for five minutes to crisp-up the coating, If you don't like coating, just add salt to oil-coated chips and continue as above. This works best with large wedge-type chips. Depends on if you mean tortilla or potato chips. I've never made homemade potato chips, but here's how to do tortilla chips:
Take some corn tortillas and cut them into strips or triangles.
Heat some vegatable/canola/corn oil in pan on the stove top (deep enough to fry a handful of your chips at a time).
Fry until the chips just start to darken (this will happen fast).
Fish them back out of the oil with a slotted spoon and spread out on papertowels or newspaper to absorb excess oil and salt (or add other seasonings) immediately.
