Check out your supermarket's dairy section for soy yogurt -- they may just have it. Otherwise try your health food store. If those fail you, you could try making your own.

Many (all that I've seen at least..) soy yogurts are gelatin free and are very tasty or can be used well in salads or other dishes.
You can make pudding with silken soft tofu, at sunflower market here in phoenix they even sell tofu pudding kits (it has no off flavor of anykind) I've even made tapioca myself with no recipe specifically, just by using substitutes and a little intuition =)
.. as far as marshmellows I've seen the site that sells some posted before, but I've never personally bought or tried them.. I'm positive someone else will see this post though and be able to reply with it for you, though =)
There is a vegetarian (possibly vegan, not sure) substitute for gelatin that you can get at some asian food shops, it's called 'agar agar'. I think it's made from seaweed, from what I remember from a question I asked about it, it is:
Used in equal amounts as gelatin, for recipes (Pannacotta, marshmallows, jelly, etc.)
Tastless and clear, so it won't affect the dish's taste.
