APPLE STRUDEL

2/3 cup milk, scalded
1/2 cup sugar
1 1/4 teaspoons salt
6 tablespoons butter, melted
2/3 cup water, lukewarm
2 tablespoons sugar
2 packages active dry yeast
3 eggs
6 cups flour

Filling:

9 apples, peeled and sliced
1 1/2 cups cream
1 1/2 cups sugar
butter
cinnamon

Scald milk in a saucepan. Add butter. Dissolve yeast in lukewarm water; add sugar and set aside to proof, about 10 minutes.
When milk and butter mixture is between 100 and 110 degrees F. (warm to the touch), stir in the yeast mixture.

Using a whisk, beat the eggs well and stir in to combine.

Gradually add in 3 cups of flour, beating until smooth with electric mixer. Stir in remaining flour, or enough to make a soft dough (about 3 cups).

Place in a greased bowl, turning once to cover with oil.

Cover and let rise until doubled in bulk, about 1-2 hours.

Turn out onto lightly floured board and divide into three pieces.

Roll out each piece and stretch with hands to fit into a 11x11x3 inch pan. Press edges tightly against pan so that it doesn't spring back. If dough is too elastic, place on counter, cover with a bowl so that it doesn't dry out and allow to rest for 30 minutes. This will relax the gluten and the dough will become more manageable.

Peel and core apples and slice thinly. Arrange the apples lengthwise in rows across the strudel dough.

Cover loosely with plastic wrap and allow to rise in a warm, draft-free place until doubled in bulk. Remove wrap. Into each of the three pans, pour 1/2 cup cream.

Cover apples in each pan with a mixture of 1/2 cup sugar and sprinkle liberally with cinnamon. Starting with the long end, roll up jell-roll style into a log. Form log into a horse-shoe or U-shape. Brush top with milk or cream and sprinkle with sugar.

Bake in a preheated 350 degrees F. oven until lightly golden, about 35 minutes. Puncture bubbles.


APPLE UPSIDE DOWN CAKE

1 stick butter
1 egg
1/3 teaspoon baking powder
1 cup sugar
1 cup all purpose flour
1 teaspoon almond flavoring
1 1/2 cups apple (more or less)
1 cup sugar
1/2 teaspoon cinnamon

Combine 1 cup sugar with 1/2 teaspoon cinnamon in a small bowl and set aside. (If more flavor is desired, sprinkle sugar with a drop of vanilla and a pinch of ginger before mixing.)
Peel, core, and very coarsely chop 1 1/2 cups of apples. Green apples, such as Granny Smith should be used as they retain more of their shape, while other types of apples might turn to applesauce. Prepare enough chopped apple to cover the bottom of the pan you'll be using and have a layer of apples 1-2 inches thick.

In a loaf pan or deep cake pan, bake the apples in a preheated 325F oven until soft. Remove from oven. Sprinkle the apples with the sugar and cinnamon mixture to coat well.

In the bowl of an electric mixer, cream together butter, 1 cup sugar, 1 cup flour, 1 egg, 1/3 teaspoon baking powder and 1 teaspoon almond extract (vanilla may be substituted).

Pour batter over apples and return pan to a preheated 350F oven. Bake until cake tests done.


EASY PINEAPPLE CAKE

1 white cake mix
1 can eagle brand milk
1 can crushed pineapple
1 large cool whip

Bake cake according to directions on the package. Poke holes in cake and add Eagle brand sweetened condensed milk, then crushed pineapple and cool whip.

PINEAPPLE UPSIDE - DOWN CAKE

1 pkg. Duncan Hines butter recipe golden cake mix
1/2 c. (1 stick) butter
1 c. brown sugar
1 (1 lb. 4 oz.) crushed pineapple
Maraschino cherry halves

Preheat oven to 375 degrees. Melt butter in a 13 x 9 x 2 inch pan. Sprinkle brown sugar evenly in pan. Drain fruit. Sprinkle pineapple evenly over brown sugar. Add cherry halves.
Mix cake as directed. Pour batter over fruit. Bake for 40 minutes, until tests done with a toothpick. Let stand 5 minutes. Then turn upside down on large platter or a cookie sheet. Serve warm. Serves 12-16.

8 cups firm tart apples, sliced
4 tablespoons sugar
2 tablespoons lemon juice
2/3 cup sifted all-purpose flour
2 cups uncooked oats
1 cup brown sugar
1 teaspoon salt
2 teaspoons ground cinnamon
2/3 cup butter, melted


Preheat oven to 375 degrees F.
In a 9 by 12-inch glass baking dish, combine apples, sugar, and lemon juice. Set aside. In another bowl, combine flour, oats, brown sugar, salt and cinnamon. Toss with melted butter until mixture resembles coarse crumbles. Top apples with oat mixture. Bake for 30 to 35 minutes, or until apples are tender. Serve warm topped with heavy cream, or cool to room temperature and serve with ice cream, if desired.

These are my favorite pineapple recipes......

Pig Out Cake
1 box of yellow cake mix
1 small can (11oz) of mandarin oranges, undrained
1/2 c. oil
4- eggs
Icing:
12-16 oz Cool whip (I use 16 oz)
1 lg. can crushed pineapple, undrained
1 sm. pkg. instant vanilla pudding
Combine cake ingredients and mix well. Bake in rectangle pan at 350 degrees for approximately 30 minutes or until inserted tooth pick comes out clean.
Combine icing ingredients and spread on cooled cake.
Cake does need to be refrigerated until ready to serve.
* I sometimes add flaked coconut to the icing mixture.

Watergate Salad
1 lg can crushed pineapple
1 box pistachio instant pudding
1 c. mini marshmallows
1/2 c. coconut
1 lg carton Cool whip
Mix pineapple and pudding mix together; then add marshmallows,
coconut and Cool whip. Mix and Chill.

How about something different and easy?

APPLE PINEAPPLE DUMPLING
2 cups chopped/diced/sliced apples
1 cup crushed pineapple
1 tbsp. nutmeg
1/2 tbsp. cinnamon
2 cup sugar
1/2 cup self-rising flour
4 tbsp. milk
1 tbsp. vanilla

Combine apples, pineapple, nutmeg, cinnamon, sugar.
Pour in 8-inch baking dish.
Mix 1/2 cup self-rising flour, milk and vanilla.
Mix thoroughly. Pour in dish of apples and pineapple.
Swirl through.
Dot with butter on top.
Bake at 350 degrees for 45 minutes.

Pineapple Rice Pudding

2? pounds rice, cooked
3 cups sugar
1 can crushed pineapple, drained (#10 can)
2 cups whipping cream, whipped

Fold all ingredients together. Chill.

Baked Apple Butterscotch Pudding
This old-fashioned baked pudding is made with apples, butter, brown sugar, and other ingredients.

INGREDIENTS:
* 1 cup brown sugar
* 1 tablespoon cornstarch
* 1/4 cup butter
* 1 cup water
* 1 1/3 cup sifted all-purpose flour
* 2 1/2 teaspoons baking powder
* 1/2 teaspoon salt
* 2/3 cup brown sugar
* 1/4 cup butter
* 1/2 cup milk
* 2 1/2 cups sliced apples mixed with 1/3 cup brown sugar

PREPARATION:
In a saucepan, combine 1 cup brown sugar, and cornstarch, 1/4 cup butter. Stir in 1 cup water; cook over low heat until thickened. Pour mixture into a lightly buttered 10x6-inch baking dish. In a bowl, combine sifted flour, baking powder, salt, and 2/3 cup brown sugar.

Blend in 1/4 cup butter and the 1/2 cup milk, stirring just until dampened. Stir in the sliced apples with 1/3 cup brown sugar. Pour apple batter over syrup in baking dish. Bake at 350° for 30 minutes.
