What makes honey crystalize? Is it bad to eat once it does?

So if you leave honey on the counter it gets hard. I have often added hot water to get the last bit out and then add it to my tea. But should this not be done. Should honey be refrigerated after it has been opened? Is there a difference between the treatment of raw and cooked honey?


Answers:
Honey never goes bad. Simply microwave it. Honey was found in the Egyptian pyramids from thousands of years ago, and it was still edible.

You can melt the honey and it will be ok. Honey does not go bad.

Putting honey in your fridge encourages the process of crystalisation. Simply keep it at room temperature. When it gets crystalised, simply put it in a tub of boiling water to loosen it up. Honey can never rot, therefore you could keep it for a long time.

Honey that is purchased at the supermarket often after some time gets that funky "look".It is perfectly fine warm it up and it tastes fine.I do not refrigerate it.Love it in tea:)

Its ok to eat it but to decrystalize it, put the bottle in a bowl of hot water for about 30 mins, it will fix it and also keep honey in cupboard not fridge.

This is sometimes called candied honey as some of the sugar has crystallised. It is sold as candied honey and is perfectly safe. Honey that goes candied at your place is perfectly OK too, though in your case the crystals might be a bit bigger. They are mainly glucose, I think and are OK.

the only thing that never spoil is honey. so i gues it is safe even though it gets hard
