How to preserve lemongrass?!


Question: How to preserve lemongrass?
I would welcome any tips for preserving lemongrass. I suspect my plant will die back over winter.

Answers:

I take the white parts only with alittle peanut oil, salt and puree them in a food processor, put them into a airtight bags to freeze, some I blend with coconut and coriander leaves for future Thai foods.



I dry, freeze and when dry I sometimes grind it in my spice grinder (old coffee grinder), in oil or other liquids you are forced to use it wet or the liquid you immersed it in, cut it into pieces, slices, chop in a food processor and either air dry or place it on a sheet pan, and place it in the oven at 75 d C or 150 d F for 1/2 hour, prop the door open and let the oven go cold, I do this with certain foods or desserts that need to be heat dried., usually overnight is fine to. Lemongrass is very hearty, it keeps well a long time



not sure what you mean unless your going in to winter since winter ending here. If you are going in to winter where you live. dig it up put it in a pots and bring it in to your house have it fresh all winter long. Or just cut stalks in to chunks of them and freeze them. don't use sesame oil like the other person said to power full of a oil flavor wise you wouldn't taste any of the light flavored lemongrass.
