sure can and you can substitute the egg in the recipe with an equal amount of applesauce. I do it all the time in the Winter.

Yes lots of people do that. It won't rise quite as well...

Sure can! it will have a slightly different taste than normal pancakes... but here's a trick: Instead of using just milk, or in your case soya milk, half it. ie. If I use one cup milk in my recipe, I would use only half a cup of milk, and top it up with water. It works quite well :) This way I use less milk and fat.

My Pancake recipe:
1 cup Flour
half cup milk
half cup water
1 egg & pinch of salt.
Done... Very simple and very tasty!

or with rice milk, or oat milk, or any other dairy free alternative, but if you want some fabulous pancakes, here's the secret: almond milk!!! (if you don't have a nut allergy!) it's creamier with way less calories than any other dairy free alternative. I like blue diamond brand, though pacific brand is ok too. YOu can find it at shop rite, stop and shop or health food stores... almond milk comes unsweetened or vanilla or chocolate flavored, substitute 1:1, and enjoy! Especially if you're getting uber creative with like maple pecan pancakes, because then the slight nutty flavor of the almond milk really highlights!
