Bread flour vs. regular flour?!

Question:

Bread flour vs. regular flour?

Is there a difference between the two, if so what?
Can I use Bread flour to make a Cobbler?

Answers:
Lucky--- there is a big difference in bread flour and all purpose flour. It starts with the difference in the wheat they are made from
Bread flour is made from hard winter wheat. It has more protean and gluten in it and used mainly to make bread and yeast rolls and other yeast risen bakery items.
All purpose flour is made from a blend of winter and summer wheat to make it have less gluten and is used for about all home baking needs. But to answer your questen .
You can use bread flour in making the crust for your cobbler if you have too. Just remember to mix the crust as little as possible after the liquid has been added.
I hope this will you in the difference of the two flours you ask about. jim b

There is a differnce. The blend of the bread flour will do a better job on making a bread than all purpose flour. I think you can make the cobbler with the bread flur and have a good result.

You do not want to use bread flour for anything that is not bread. You will need to use all-purpose flour as bread flour, or self-rising flour, is made with yeast already in it. You do not want the yeast into your cobbler.

Bread flour is higher gluten - it is "tougher" than regular flour to develop the structure needed for bread. Since the batter for a cobbler isn't "worked" (kneaded) you should be alright using bread flour. Do NOT use "self rising" flour - you would have to make some adjustments in the recipe.
