How do steam ovens work?

what are the benefits of a steam oven compared to a fan or conventional oven? Would it be useful in a bed and breakfast business?


Answers:
A proper steam oven is pressurised so that the steam temperature is quite high and the product cooks in the steam and all flavour is kept in and no vitamins are lost. The smaller cheaper steamer works in a similar way but at atmospheric pressure but the effect is the same.

STEAM ONES ARE GOOD BUT ARE MORE IDEAL FOR COOKING MEAT

i think you are refering to a combi oven which works with heat and steam
you can cook at lower temps and you can cook without wrapping the product with plastics as the steam keeps it from burning on top.
I have used these in the past and they are fast and would be better than an oven for you.
