How long does parmesan cheese last?!

How long does parmesan cheese last?

when its in the brick.. or its not really a brick, its more aof a triangle shape. but you know what i mean lol. how long will it last in the fridge untill it goes bad?

The waxed paper is fine for the outer wrap, I would use a piece of papaer towel, as it will absorb any moisture that can cause mold, but that is not a probelm, so here is the "Real Chefs" advice, in the establishments I was a chef in when working for 20 yrs in Canada, Asia and Jamaica, we grated it as we needed it, also you can keep it in an air tight jar ot container.

It never really goes bad, I had someone time at a Italian specialty store in Toronto Canada that was 20 yrs old, they had to keep it in a sealed room, it is very aromatic at that age, but is like wine, heavenly, not something you would use for you spaghetti, and like aged balsamic vinegar, a little goes along way.

I bought 1 kilo of fresh parmesan cheese in Italy after Easter. It is still fresh!(what's left of it)

wrap it in paper (no plastic) and it will last for 2 weeks.

I can't give you an exact time, since it never lasts that long at my house, but it will last almost forever if you store it in a loose wrap of waxed paper, then tightly sealed plastic bag. It does get harder, but still grates wonderfully. If you have a bit of mold on the outside, don't worry about it, just trim it off. Others will not agree, but, hey........cheese does get moldy and parm can only get better with age, right?

If you have that little triangle, and know you won't use it all, grate it, and freeze in a sealed freezer bag.

I can't wait to see what a "REAL CHEF" has to say about this.
