I am having Pot Luck next week at work. Can anyone suggest something to make? I did not want to bring the routine chips and dip.

Southwestern Taco Pot Pie Recipe courtesy Barry Conway

1 pound lean ground beef
1 (1.25-ounce) package Taco Seasoning Mix
1/3 cup water
1 tablespoon oil
1 (1-pound) package frozen green, red and yellow peppers and onions*
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon pepper
1 (11-ounce) can whole kernel corn, drained
1/2 cup salsa
1 (15-ounce) package refrigerated pie crusts, softened as directed on package
8 ounces (2 cups) shredded cheese recommended: Colby/Monterey blend or Mexican blend
Garnish:
Sour cream
Taco Sauce
Preheat the oven to 400 degrees F.
Brown ground beef in large skillet over medium-high heat for 8 to 10 minutes or until thoroughly cooked, stirring frequently. Drain. Add taco seasoning mix and water; mix until ground beef is well coated.
Meanwhile, heat oil in large saucepan over medium high heat until hot. Add peppers and onions; cook 4 to 5 minutes or until tender, stirring occasionally. Remove from heat and drain excess liquid. Add garlic and onion powders, salt, pepper, corn, and salsa, stir well and set aside.
Prepare pie crusts as directed on package for 2-crust pie using 9-inch glass or metal pie pan.
Combine salsa and corn mixture with ground beef; mix well. Sprinkle 1/2 cup of cheese evenly in bottom of crust-lined pan. Spread 1/2 of beef mixture evenly in pan over cheese, pat down. Sprinkle 3/4 cup cheese in pan and spread evenly with remaining beef mixture, pat down, top with remaining 3/4 cup cheese. Top with second crust and flute; slit in several places.
Bake for 30 minutes or until crust is golden brown. Cover edge of crust with strips of foil or a pie crust shield after 15 minutes of baking. Let stand 5 minutes before serving. Store in refrigerator.
Garnish with a dollop of sour cream and a drizzle of taco sauce. Also recommended: guacamole, salsa, and diced green chiles.

Nachos and Dip simple and easy screw anything else...let the other shmucks bring the bigger stuff.

"Pot" luck brownies! IF you know what I mean....

Casseroles are always good.
Tortilla roll ups- flour tortilla, cream cheese to spread on them, cheese & meat of some kind. Roll them up & slice them into sections. They are really good & easy to make.

I usually bring baked spaghetti or a desert.

Bring a pot of chili and an assortment of toppings like shredded cheese, lettuce, tomatoes, sliced black olives, chopped onions, plus sour cream, taco sauce and hot sauce.
If money is an issue, use lots of beans!

Baked beans? Non-creamy (like German) potato salad? A pasta bake? A soup in a crockpot?

Defrost (not cook) a pound bag of frozen peas...mix in about a cup of chopped purple onions and a half cup of salted peanuts...toss with mayo and a touch of milk to make it creamy...yummmmmmmmmmmmmmmmmmm...

Pigs in Blankets! They are so easy to make and taste so good. Just get some chorizo and cut it into 2" pieces. Get some puff pastry and cut it into 2"x4" pieces, and wrap them around the chorizo pieces. Press the seams together to seal the chorizo in, then place them on a baking pan seam-down and bake for 10-15 minutes (until golden brown) at 350 degrees. Serve them with ketchup and mustard. They're always a big hit when I make them.

Take a casserole with pasta, a tomato or Alfredo sauce, cheeses, meat, etc. Baked until bubbly. Reheat in microwave oven.
Take a grilled chicken salad. Take 3 cups cubed white grilled chicken breasts (or boiled ones will work), shredded carrots, romaine lettuce, grape tomatoes, snow peas with the ends snipped off, drained Mandarin oranges, and a vinaigrette of balsamic vinegar a dash of soy sauce, 1 tsp of sesame seed oil, additional olive oil, 2 tsp. sugar, some salt and pepper. Bring salad and the dressing in separate containers, and mix at the last moment. Have fun!

Deviled eggs are easy and usually always get eaten. Just hard cook some eggs. Remove and mash the yolks. Add mayo, Hormel REAL bacon bits, salt and pepper. Restuff yolks into white halves.

Also, easy and yummy. Meatballs. I usually buy precooked frozen meatballs. Mix together one 12 oz. bottle of chile sauce (in the Heinz ketchup section) and 1 large jar grape jelly. Put all into crock pot and cook until meatballs are hot.

Another thing that I have done is bought frozen cream puffs from WalMart or Sam's Club. You can put them on a pretty platter and sprinkle them with powdered sugar or drizzle choc. sauce over the top.

Cheesy Chicken Broccoli & Rice Casserole (Regular, Italian, or Mexican)

Ingredients:

1 can Condensed Cream of Chicken Soup, or Broccoli, or Mushroom
1 1/3 cups water
3/4 cup uncooked regular long-grain white rice
2 cups fresh or frozen broccoli pieces
4 skinless, boneless chicken breast dieced or cut in strips
1/2 cup shredded Cheddar cheese
1/2 cup seasoned bread crumbs

Directions:

1. Stir the soup, water, rice, broccoli and seasoning in a 12 x 8” shallow baking dish.

2. Top with chicken. Season chicken as desired. Cover.

3. Bake at 375°F. for 45 min. or until done. Top with bread crumbs and cheese.

For Italian: use 1 tsp. Italian seasoning. Substitute 1/3 cup shredded Parmesan for Cheddar.

Mexican: use 1 tsp. chili powder, corn w/red peppers and Mexican cheese blend.

Greek salad is easy; tomatoes, green peppers, sweet onions, feta cheese crumbled on top and buy some Kraft greek salad dressing.

CLUB CHICKEN CASSEROLE

1/4 c. butter
1/4 c. all-purpose flour
1 c. chicken broth
1 (14 1/2 oz. can - 1 2/3 c.) evaporated milk
1/2 c. water
1 1/2 tsp. salt
3 c. cooked rice
2 1/2 c. diced cooked chicken
1 (3 oz. can - 2/3 c.) sliced mushrooms (drained)
1/3 c. chopped green pepper
1/4 c. chopped pimento

Preheat oven to 350 degrees.

Melt butter; blend in flour. Add broth, milk and water; cook and stir over low heat until thick. Add salt, rice, chicken and vegetables. Pour into greased 11 1/2 x 7 1/2 x 1 1/2 inch baking dish.

Bake in moderate 350 degree oven for 30 minutes. If desired, top with 1/2 cup slivered blanched almonds, toasted. Yield 6 portions.

Easy Quiche

4 eggs
1 cup half-and-half
1/2 cup real mayonnaise
2 tablespoons flour
1/3 cup minced onions Salt and garlic powder
Ingredients are whatever you want.
Example:
8 ounces shredded Swiss or sharp cheddar cheese
1 package frozen chopped spinach defrosted and drained well
Ham, Cooked bacon etc.
1 (9-inch) unbaked deep dish pie shell

Preheat the oven to 350 degrees F. Hand whip eggs, half-and-half, mayonnaise, and flour in a medium mixing bowl. Add remaining ingredients. Pour into an unbaked 9-inch, deep pie crust.

Bake for 45 minutes to 1 hour or until the top is golden brown (more like 1 hr.).

Note: The more ingredients you add the more filling it makes. You may end up with more filling than will fit into crust.

I always make a Fruit Platter. Just take what ever fruits are in season.. Watermelon, get a ripe one, cantelope, green and red grapes, black cherries, strawberries, Kiwi fruit, sliced. Prep it all, arrange nicely on a foil lined tray! Takes less than half an hour and I always come home with an empty tray!
