well it depends on how you are cooking them. If you are baking them, then it takes 45 min. to an hour. If you are boiling them, then it takes about 20 min. after boiling starts.
Are you boiling them or baking them?
Put them right into the soup an hour before the soup is ready. This would be for potato cubes.
You might have to add more salt to the broth because potatoes will affect the salt already in there. In fact, adding potatoes to soup that has been over-salted is a tried and true remedy.

SMALLER= FASTER
LARGER= SLOWER
BOIL THEM FOR 10-15 MINUTES

If you are boiling them, after about 20 minutes stick a fork into one of them. If the potato slides of right away its done, if not cook another 5 minutes then test again.
Peel and dice, simmer for about 5-10 minutes and add to soup if you want them intact, a little longer if you want them to turn to mush, to thicken your soup.
