Apple cider and all the others as well get converted to alcohol. ~
This process stops when the alcohol content becomes strong enough to kill the alcohol producing organisms.

carbon dioxide is produced in the juice and it gets a disgusting, almost alcholic taste.

The same process as for grapes....WINE All fruits produce alcohol. I admit its a very disgusting taste. Beer and hard liquor taste terrible too. But beer tastes good in recipes.

apples fermented turns into hard cider, grapes turn into wine, etc. the fruit sugars turn alcoholic.

You get wine, vinegar and just spoiled fruit juice. Depends on how it's fermented.

You get.. apple wine, orange wine (not very good) Carnberry wine...etc etc etc.. not all these fruits are very good as wine/coolers, that's why the majority of wines are made with grapes... but none the less, juice will be alcohol if it is fermented. Also, if your doing the fermenting yourself, make sure it is in a safe way, or you could get very sick from food poisoning...
