INGREDIENTS
2 avocados
1 small onion, finely chopped
1 clove garlic, minced
1 ripe tomato, chopped
1 lime, juiced
salt and pepper to taste
DIRECTIONS
Peel and mash avocados in a medium serving bowl. Stir in onion, garlic, tomato, lime juice, salt and pepper. Season with remaining lime juice and salt and pepper to taste. Chill for half an hour to blend flavors.

AVOCADO DIP

1 large or 2 small avocados
1 (8 oz.) cream cheese
1/2 c. diced fresh tomato
1/4 c. finely diced onion
1 tbsp. lemon juice

Mash avocado and cream cheese in a bowl and cream until smooth. Add tomatoes and onions and lemon juice, salt to taste. Stir in just as much hot sauce to suit your taste. Serve with chips or crackers.

TACO-AVOCADO-BEAN DIP

1 1/2 avocados
2 tbsp. lemon juice
8 oz. sour cream
1/2 c. mayonnaise
1 pkg. taco mix
2 cans Old El Paso bean dip
8 oz. shredded cheddar cheese
1 onion, chopped
1 tomato, chopped
Black olives (optional)
Green pepper (optional)
Salt and pepper to taste

Peel and chop avocado. Add lemon juice and season with salt and pepper. In second bowl mix mayonnaise, sour cream and taco seasoning. Layer bean dip, avocado, sour cream mixture, and cheese. Top with onion, tomato and, if desired, black olives and chopped green pepper. Serve with tortilla chips.

AVOCADO STOCK DIP

1 (8 oz.) avocado dip
1 (8 oz.) sour cream
1 tsp. lemon juice
1 (8 oz.) cream cheese
1/2 tsp. salt

Mix above ingredients and spread on flat pan. Add below ingredients in layers on top of mix:

1/3-1/2 heads lettuce, diced
1 chopped tomato
Chopped green onion to taste
Grated cheese
Sliced or diced black olives

I like this because I'm allergic to onions, and picky kids like it too -

Avocado Ranch Dip

1 (16 ounce) container sour cream
1 (8 ounce) package Neufchatel cheese (cream cheese if you can't fine Neufchatel)
1 (1 ounce) package ranch dressing mix
3/4 teaspoon hot sauce
1/4 teaspoon garlic salt
1/4 teaspoon celery salt
2 avocados, peeled and pitted

DIRECTIONS
In a food processor, mix the sour cream, Neufchatel cheese, ranch dressing mix, hot sauce, garlic salt, and celery salt.

In a bowl, mash the avocados, and mix in the sour cream mixture until well blended. Cover, and chill until serving.

Excellent with tortilla chips!

Try it with tomatillos - yummy!

3/4 pound fresh tomatillos
4 large garlic cloves
3 avocados
1/2 cup chopped fresh cilantro sprigs
1 1/2 tablespoons fresh lime juice, or to taste
4 tablespoons finely chopped red onion preparation
Remove husks and rinse tomatillos under warm water to remove stickiness. Heat a well-seasoned cast-iron skillet or griddle over moderately high heat until hot but not smoking and lightly brown tomatillos and garlic in spots all over (do not let burn). Transfer tomatillos and garlic to a plate and cool them to room temperature.
In a food processor purée tomatillos and garlic until smooth. Halve and pit avocados and scoop into tomatillo mixture. Pulse until coarsely chopped. Stir in cilantro, lime juice, 3 tablespoons onion, and salt and pepper to taste. Garnish dip with remaining tablespoon chopped onion and serve with tortilla chips.

this is my own, it started with my family pico de gallo, and then we added my sister in laws avocado/ cilantro/sour cream dip we love it, been using it for the last 4yrs and every time we're invited to any party we can't show up without this dip. what i do is i make my pico, then my avocado, so you really can end up with three dips, then i get the two and mix what ever i want, note if you use the serrano don't use the whole pepper its hot, cut small add a little at a time tasting until you find the heat you want.

4-6 avocados smash, but alittle chunky
2-3 tablespoons sour cream
6 tomatoes, diced
1 white onion, diced
1 serrano or jalapeno pepper, minced
1 bunch cilantro leaves, minced
1 lime, juiced
1 lemon, juiced
1 can of beer
Kosher salt, ground black pepper,garlic powder, onion powder. To your taste
In a bowl, combine the tomatoes, onion, chile, cilantro and spices with lime/lemon mix, and 1/4-1/2 cup of beer drink the rest lol (optional) and let it sit in fridge for a while,smash avocado and mix with sour cream .then mix everything together. Mix well to incorporate the ingredients evenly. Serve with tortilla chips.

I keep it as simple as possible and try not to interfere with the natural flavor of the avocado.

Blend avocado with sour cream and a dash of lemon or lime and a touch of salt as a preservative.

Ranch dressing can be mixed in for variation.
