Chocolate Applesauce Cake

1/2 cup shortening
1 1/2 cups sugar
2 eggs
2 tablespoons cocoa
2 cups flour
1 1/2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon cinnamon
2 cups applesauce
1 (6 ounce) package chocolate chips
2 tablespoons sugar, for topping
1/2 cup nuts

1.Cream shortening and 1 1/2 cups sugar.
2.Add eggs, then add next five ingredients.
3.Mix well.
4.Add applesauce.
5.Mix.
6.Pour into greased 8 × 12-inch pan.
7.Sprinkle with remaining sugar, chocolate chips and chopped nuts.
8.Bake for 40 minutes at 350o degrees

CHOCOLATE APPLESAUCE CAKE

1 pkg. Duncan Hines Swiss chocolate cake mix
1/4 c. oil
2 eggs
1 (15 oz.) can applesauce
12 oz. chocolate chips
3 tsp. sugar

Combine cake mix, oil, eggs and applesauce. Blend until moistened, beat 2 minutes at medium speed. Fold in 1 cup chocolate chips. Pour into greased 9x13 inch pan. Spread evenly. Sprinkle sugar evenly over top. Sprinkle remaining chocolate chips on top of sugar. Bake at 350 degrees for 35 minutes.


BRIDE'S CAKE FROSTING

2 c. sugar
1/2 c. water
1/8 tsp. cream of tartar
1/8 tsp. salt
2 egg whites
1 tsp. vanilla

Cook sugar, water and cream of tartar in saucepan to soft-ball stage or 236 degrees F. or candy thermometer. Add salt to egg whites in upper part of double boiler. Beat until frothy. Place over hot water and gradually add sugar syrup, beating constantly. Continue beating until mixture forms peaks. Add vanilla. (Double recipe for a 3-tier cake.) For floral decorating use pastry tube.

Best Cream Cheese Frosting
8 ounces cream cheese, softened
1/4 cup butter, softened
2 teaspoons milk
1 teaspoon vanilla
4 cups powdered sugar



1. beat cream cheese, softened butter and vanilla with mixer on low speed till blended.
2. add powdered sugar, one cup at a time till blended.
3. mix on medium speed for 4 minutes --
4. enough frosting for 13x9 pan or to frost and fill 9" layer cake.
