Vegetarian problems?

I have Celiac disease, an acute allergy to peanuts, a mild allergy to legumes and shellfish, and am lactose intolerant. I seem to do best on a diet of meat, fish, eggs, potatoes, rice, leafy green vegetables, and root vegetables, a kind of Japanese diet, minus the Soy. I'm fine on that diet. Adding other vegetables or legumes makes me mildly to badly ill. Suggestions?


Answers:
I am in the same boat. I am celiac, allergic to soy, eggs, commercial dairy, corn, peanuts, shellfish and others. It sounds like you might be sensitive to foods that contain amines, glutamines, and salycilates, or you might be allergic to msg which is in most pesticides used in commercial growing. Have you tried organic veggies and legumes? Most foods today have been genetically modified with DNA from other sources, so if you are allergic to something like wheat, and its been GMO with corn, you will react to the corn as well. Make sure the foods you eat are not GMO-almost all commercially sold vegetables and fruits in the markets today have been genetically modified. Unless the foods are clearly marked NON GMO, its likely that they are. Soy, wheat and corn have all been modified with each others DNA, making it really hard to find safe sources. Email me if you need more info. I can tolerate non gmo legumes and veggies, but not the standard off the shelf stuff at all. Also, keep in mind that just washing a commercial veg wont remove all of the pesticide residue, as some of it is absorbed into the produce. Try some quinoa for a good source of protein, or millet or amaranth. Flax seed is a great way to get omega 3 fatty acids. Also, keep in mind that most cattle, poultry and fish raised for food are fed a diet high in pesticide laden soy, wheat and corn, and those toxins pass through into the meat. Thats why I stay on a strictly organic, vegetarian diet. You might also want to have your iron and ferratin levels checked to see if thats the underlying cause of your allergies. Do a little research on GMO foods-it is the leading cause for adult onset multiple food allergies. Here is a good link
http://www.krafty.org/why.html Kraft foods, which produces SOOOO many "foods", such as boca burgers, macaroni, packaged goods, etc, is notorious for using GMO products in their entire line, including the vegetarian meat substitutes
