What is it mean U,D,K on food?

Different types of kosher markings -- the name is hechsher. People who keep kosher do not mix milk and meat so the marks on processed foods let people know if they are dairy, meat or neutral ("pareve"). Believe it or not sometimes it is hard to figure out -- fish for example are not considered meat but neutral. And gelatin (certain brands) are derived from meat (bones) -- sometimes even pork, which is a definite no-no! So therefore Jell-O and whipped cream cannot be mixed if you are kosher. And believe it or not Bac-Os are kosher!! They are made from soy, not bacon so they are perfectly acceptable.

i think maybe its the opposite of idk. something like "u dont know" but in leet-speak

it means the food is kosher
