Also, are they okay to give to a baby (10-mths) if they are put in the food processor?

ARTICHOKE-GREEN BEAN CASSEROLE

2 (16 oz.) cans French style green beans
2 (14 oz.) cans artichoke hearts in water
1 med. onion, finely chopped
5 cloves garlic, pressed
1/2 c. olive oil
1/2 c. Italian bread crumbs
1 c. Parmesan
Salt and pepper to taste

Saute onions in olive oil; add garlic. Drain beans and artichokes; chop together. Add beans and artichokes to onions and garlic. Mix and cook about 5 minutes. Add bread crumbs and Parmesan cheese. Bake in covered casserole dish for approximately 20-25 minutes.

CHICKEN BREAST WITH ARTICHOKE HEARTS

12 skinned & boned chicken breast halves
2 (14 oz.) cans artichoke
2 (10 oz.) cans cream of chicken soup
1/2 c. white wine
1 c. herbed stuffing mix
1/2 stick butter
1 lb. fresh mushrooms, whole or sliced

Rinse and drain artichoke hearts and place in bottom of buttered casserole. Add mushrooms, wine and soup. Push chicken in half way, cover with stuffing mix and butter dots. (Can be done this far and frozen.) Cover with foil and bake at 350 degrees for 45 minutes. Remove foil and bake 30 minutes longer.

I wouldnt give a baby that young artichokes, it's not something that they are routinely fed. Their little stomachs are not equipped to digest these types of things, and being so young, you also run the risk of them being allergic to them

Sauteed Chicken Breast with Artichokes and Peppers

4 teaspoons extra-virgin olive oil
4 boneless skinless chicken breasts (about 6 ounces each )
Kosher salt and freshly ground black pepper
1 onion, halved and sliced
4 cloves garlic, smashed
2 sprigs fresh thyme, leaves stripped
1 1/2 cups jarred marinated artichokes, drained and patted dry
1/2 cup jarred roasted red peppers, sliced into strips
2 tablespoons dry vermouth
1 cup chicken broth, homemade or low-sodium canned
1 to 2 tablespoons unsalted butter
1/4 cup flat leaf parsley leaves

Preheat the oven to 400 degrees F.
Heat a large skillet over medium-high heat; add the olive oil. Season the chicken with salt and pepper to taste. Lay the chicken skinned side down in the skillet and cook, turning once, until golden, about 4 minutes per side. Transfer the chicken to a baking dish or roasting pan and bake just until firm to the touch, about 10 minutes.

Meanwhile, add the onion, garlic, thyme to the skillet and season with salt and pepper, to taste. Cook, stirring occasionally, until brown, about 5 minutes. Add the artichokes and peppers and cook until brown as well, about 3 minutes. Add the vermouth and stir with a wooden spoon to scrape up the browned bits from the bottom of the pan. Simmer until the vermouth is syrupy, then add the broth and bring the mixture to a full boil. Simmer until the sauce thickens, and season with salt and pepper. Whisk in the butter and add the parsley. Pour the sauce over the chicken, and serve.

yes you can feed them to your baby. If he will actually eat them.
I prefer to grill artichokes. Drain thoroughly and pat dry.
Add a little bit of olive oil and throw on a hot grill.
Turn them over a couple of times and remove from grill.
Gives them a great smokey flavor with out any added fat or seasoning.

You can buy frozen or canned artichoke hearts for convenience. Try this recipe the next time you have leftover mashed potatoes.

1 lb. frozen or canned artichoke hearts

1 to 2 cups mashed potatoes

4 Tbs. butter

1 Tbs. chopped fresh tarragon or 1 tsp. dried

1/2 tsp. grated lemon rind

Salt and freshly ground pepper, to taste

If using frozen artichoke bottoms, steam or boil until tender. If using canned, drain thoroughly. Purée the artichoke bottoms in a food processor or blender. In a saucepan over low heat, combine the artichoke purée with the remaining ingredients and heat until warmed through, stirring occasionally.

Not sure if you can make this using canned artichokes as a replacement, but you might like to try!
