I have a dinner date with my girlfriend. What should I cook?!

Question:

I have a dinner date with my girlfriend. What should I cook?

I have a date with my girlfriend Andrea. We usually order pizza or take out. But she requested something special. I was thinking meatloaf...but I'm not sure. I don't won't anything too special that she'd think I was ready to pop the question because i'm not. She is highly allergic to mushrooms. If you find any good recipes please post them. Thanks

Answers:
Try a ham loaf with a salad and olive oil dresing. Ham loaf is different, simple to make, and if all alse fails (or you are not a cook) you can usually buy one at krogers that all you have to do is put it in the oven. Also twice baked potatoes go great with this. You can buy them pre made also. Just pop them in the oven. A sarah lee cheese cake with fresh strawberries is usually a winner too. I made this for my wife before we were married and never told her it was not home made for 15 years. If you aren,t popping the question as you say I,d skip the champagne though. LOL! Oh yeah, I had an instant lottery ticket by her plate that turned out to be a 100$ winner. I think she liked that.

wait - that might be too special

try this instead:
Linguine with Fresh Tomato Sauce

For tomato sauce:
2 cups seeded, and coarsely chopped tomato
1/2 cup extra virgin olive oil
1 cup firmly packed fresh basil leaves, minced
1 cup firmly packed fresh parsley leaves, minced
3 tablespoons freshly grated Parmesan
3 garlic cloves, or to taste, minced
2 teaspoons salt
1 pound linguine
Fresh parsley to garnish

Make tomato sauce:
In a bowl combine well all the sauce ingredients and let the sauce stand at room temperature, covered, for at least 1 hour.
In large pot, bring 5 quarts of salted water to a boil. Add linguine and stir to prevent sticking. Return water to boil and cook until pasta is firm but cooked, approximately 7 to 10 minutes, stirring occasionally. Drain pasta well. Serve with tomato sauce, and garnish with fresh parsley.

Three-Herb Pesto with Grilled Vegetables

2/3 cup firmly packed fresh basil leaves
2/3 cup firmly packed fresh mint leaves
2/3 cup firmly packed fresh parsley leaves
1/3 cup pine nuts
1/3 cup freshly grated Parmesan cheese
2 large garlic cloves, minced and mashed to a paste with 1/2 teaspoon salt
1/2 cup olive oil
1 tablespoon balsamic vinegar, or to taste
A variety of grilled vegetables

In a blender or food processor, puree all ingredients with salt and pepper to taste until smooth. Pesto keeps in a jar with a tight-fitting lid, chilled up to 1 week. Let pesto come to room temperature before using. Drizzle over grilled vegetables

This is going to sound a little silly, but........
you could do Spaghetti, a salad, and garlic bread and a decent wine.
The Spaghetti you could get off the self, fry the hamburger meat, mix together, (she doesn't have to know), bread from the freezer, salad in the bag.

Sounds a little cheap, but most women love pasta. That was the first thing my Husband made me. I really like the fact that he made me something. It was decent too.

Go with the meatloaf. Check the reference below for a version that's a little fancier than usual. During last 15 minutes or so of cooking, you layer Pilsbury crescent roll dough over the meatloaf. It's even better if you brush the dough with beaten egg yolk before returning loaf to the oven. This dish comes out like Beef Wellington, but is easy enough even for a beginner to get great results.
For desert I would recommend fresh strawberries dipped in chocolate. Make sure strawberries are dried completely. Melt a bag of chocolate chips in the microwave. (On the stove works too, so long as you're careful not to burn them.) Dip strawberries in the chocolate and set on wax paper. Let them chill in the fridge. If chocolate starts getting too stiff, heat it some more.

You can't go wrong with pasta;-} as long as it's not too much.
Choose an interesting shape & colour like green fettucini.
Guys like spicy sausage, but most girls like shrimp.
You can make a nice red, white, or pink sauce.
Start with store bottled & add oregano & basil spices.
Or make from scratch to avoid the mushrooms.
Have a nice green salad to start with, everything's in season.
Try a simple dessert too, fruit salad or frozen yoghurt.

I don't think meatloaf is a very "special" choice.

Why not have a "picnic" on a blanket in your living room, or a real picnic if there's a good place nearby? Make nice ham and cheese sandwiches (really thick, good quality ham, and a fancy bread from your store's bakery), and get a fruit and dip tray and a veggie and dip tray at your local grocery store. Include a bottle of a nice light rose wine.
Then do the sensual strawberries dipped in chocolate for dessert as someone suggested.
