I am attending a picnic Graduation Party this week-end and would like to bring a salad that will be appealing to both adults and children.
Got any hit's that go over really well in your recipe collection???

My friends and I love this slaw salad:
Totally Red Slaw:
1head of red cabbage sliced fine
1 medium red onion, sliced fine
1.5 cups of dried cherries or dried cranberries
1 can of sliced beets, julienned to thin strips
Dressing: 1/3 cup raspberry vinegar
1-2 Tbls raspberry jam. Mix both with salt and pour over slaw ingredients
Let sit 20 minutes
Delicious, tangy, sweet (great for kids) and very pretty to look at.
(PS wear a bib over your white blouse. This stuff will never come out of fabric)

Cold Noodle Salad

1/4 cup honey
1/4 cup soy sauce
4 teaspoons sesame oil
1 pound soba noodles, cooked until tender and refreshed in ice water
1/2 cup thinly sliced green onions - optional
1/2 cup bean sprouts - optional
1/2 cup thinly sliced carrots
1/2 cup cucumber, peeled, seeded, and thinly sliced
1 cup lightly crushed toasted cashews
3 tablespoons chopped fresh cilantro
2 tablespoons black sesame seeds

In a small bowl, whisk together honey, soy sauce and sesame oil. To the noodles, add green onions, bean sprouts, carrots, cucumber, cashews, cilantro, sesame seeds, and the soy mixture and mix thoroughly.

CHICKEN AND BEAN SALAD

2 cups cooked chicken, shredded
1 can cannellini beans
1/4 cup green onions, sliced
1/3 cup miracle whip salad dressing
1 tablespoon soy sauce
1 teaspoon freshly grated ginger
2 teaspoons rice vinegar
1/4 teaspoon dijon mustard
2 garlic cloves, minced
1/2 red onion, sliced thinly
1/8 teaspoon cayenne pepper (pinch)
lettuce leaves

Combine chicken, beans, onions, in a salad bowl.
In a small bowl or blender, combine ginger, soy sauce, vinegar, mustard, garlic, and mayonnaise; blend.

Toss with chicken mixture and serve over lettuce leaves.

BOCCONCINI (MOZZARELLA) AND TOMATO
SALAD

This is a true Summertime salad because it is best made with garden-fresh, ripe ingredients. The riper the tomatoes, the better; and only fresh basil leaves will do. Use your best quality, fruit olive oil for this one.

Vinaigrette:

1/3 cup extra virgin olive oil
3-4 tablespoons balsamic vinegar
1 tablespoon fresh basil, chopped
1/2 teaspoon fresh oregano, or 1/4 teaspoon dry
1/4 teaspoon sea salt
pinch of red pepper flakes
3 garlic cloves, finely minced


Salad:

2 tablespoons pitted black oil cure olive, chopped
1/2 lb small mozzarella balls (Bocconcini)
5 ripe tomatoes, cut into 1" thick wedges

Allow the minced garlic to stand in the vinegar for 10-15 minutes before preparing recipe. This will help remove the "bite" from the garlic and mellow it.
Meanwhile, slice tomatoes into wedges. Drain mozzarella balls (they are normally packaged in a brine). Remove pits from black olives and coarsely chop. Set these ingredients aside in a salad bowl.

Combine vinaigrette ingredients in a cruet or in a blender with the garlic and vinegar from above. Use 4 tablespoons vinegar if you like a tangy salad (3 tablespoons if you don't). You can use all balsamic vinegar, or if you prefer a milder dressing, use half balsamic and half red wine or Chianti vinegar. No mincing or chopping is required if a blender is used - pulse briefly.

Pour vinaigrette over tomatoes, cheese and olives; stir to coat. Do not add too much dressing - just enough.

Can be served with peeled, sliced cucumbers (1/4" coins or 1/2" cubes), if desired.

Season to taste with freshly grated black pepper (and salt, if needed) and serve, optionally, on a bed of radicchio or escarole hearts.

This is a really easy fruit salad called Debbie's Delight. You need to get frozen strawberries in light syrup, canned Mandarin oranges in their own juice, canned pineapple in it's own juice, and mix it all in one bowl right before you leave for the picnic.

I always make this taco salad, kids love it and so do adults. It's so good to eat the next day too.

you need:

-1 bag of Dorritos
-2 cubes of cheese (any kind you like, I usually use cheddar & can be found at any grocery store)
-1 head of lettuce (or shredded in a bag)
-About 2 tomatos, or however many you like
-2 bottles of Creamy Italian dressing (looks like ranch)
-1 lb. of ground beef
-Taco seasoning

Brown the meat and add the taco seasoning to your preference of taste. Then dice up the tomatos into small cubes, along with the cheese. (Pretty much cut everything to bite size pieces.) Crunch the bag of Dorritos while they're still in the bag.
*Remember not to mix the ingredients until you're ready to serve them, It keeps the chips crunchy.

I love this salad, def. my favorite and everybody loves it, at least to the parties I've made it and gone to.

My stepmom makes the pasta salad that everyone loves:

- Cooked Pasta (the thick twirly ones or the bowties!)
- Pasta Salad seasoning
- Italian Dressing
- Cucumbers/Peppers (optional) and Onions (optional)

When she makes this for my little brother she spices it up and always puts in some Cheese (the orange kind LOL), Pepperoni and Salami. You buy the blocks and cut them up in chunks.

Make it the day before so the ingredients 'marry' or 'merry' (whatever the word is) together.
Its amazing! Every one of my brothers friends love it. It's fun for the kids, what kid do you know that doesnt like cheese and pepperoni? Yet its yummy and delicious for the adults.

Just thought I'd share! Even if you don't make it for the party, you should really try it. You can even have your Bailey (and other golden) help you eat some of the Cheese! :]

The Dorito/Taco Salad idea a few above me is
REALLY good, and definitly appealing to adults and kids...
Thats a great one!

Any kind of fruit salad works for people of all ages. You could half a watermelon, empty it and fill it with various fruits, melons, berries & grapes (no pineapple)or try a seven layer salad:

7 layer salad
layer lettuce at the bottom of a deep bowl
layer of eggs
layer peas on top of eggs
bacon bits on top of peas
layer mayonnaise mixed with 1 to 2 tablespoons of sugar on top of whole thing
shredded cheddar cheese next
finally diced green onions to top it off

You will need enough of each item to make a layer to fill the size bowl you will be taking. Add salt and pepper to taste and this salad needs to chill 12 to 24 hours.

As soon as I seen your question I knew I wanted to suggest the Seven Layer / 24 hour Salad. Every time I've made it & someone knew has tried it they love it. My daughter's friends always asks on the holidays if I made it & if so they expect some. I also add diced celery about 1 1/2 cups. http://southernfood.about.com/od/vegetab... What??? No potato salad?
