A meal for one.
A vegan one if possible=]

Answers:
They make a DELICIOUS salsa.
Drain the beans and mix them with a can of corn, and some chopped tomatoes, chopped green and yellow peppers, and onions and garlic if you like. Sprinkle a little (1/4 tsp or less) taco seasoning in if you like. Add salt and pepper.

You can use this hot or cold. Scoop it up with tortilla chips, spread it over grilled fish or chicken, or wrap it up in tortillas with shredded cheese.

Canned black beans also make great soup. The link below is a recipe I've used and liked.

Good eating!

You could make a quesadilla

Make a black bean salad with roasted red peppers, feta, red onion and some sauteed carrots mix with a viniagrette. Serve with rice.

diced tomatoes, on top or on the side:

whole grain bread w/ v olive oil

or just dip the bread in the black beans:

we also add sour cream to our black beans and cook them long enough you can mush them to make the soup!

cheddar cheese is good too:

Maybe a veggie chili.

beans
tomatoes (with juice from can)
cilantro
cumin
onions
garlic
veggie stock or water

and simmer for a while.

Try cornbread or better yet a bran muffin!
Honestly though I do have a good vegan chocolate cake recipe. I,ll put in the link for the recipe below.

Although I usually make it in larger quantities, you can make black bean soup. Mash 1/2 the black beans and put all in a pot with about a cup of broth or vegetable boullion. Sautee a little garlic, chopped onion, and chopped celery and add to the soup (a little chopped tomato is good too). Add salt and pepper to taste. At the end, add a little sherry. If you don't like or have sherry, then add a little cumin. This is good as a soup, or over rice. Serve with a salad and crusty bread.

rice and onion
