Hello! Perhaps your friend would enjoy a veggie lasagna. it's full or Ricotta and Mozzarella cheeses and you can load it with pretty much any vegetable you like. Unfortunately I don't have this recipe on hand but I'll give you a link where you can search for a vegetable lasagna recipe. You should find recipes of all different skill levels here.

Pasta priamvera = steamed pasta....sauted veggies of your choice and lob on cheese of your choice and bake til golden!!
MANJA!

Chicken Spaghetti

8 boneless skinless chicken breast halves
salt and pepper
1 (12 ounce) package thin spaghetti
1 onion, chopped
1 green bell pepper, chopped
2 tablespoons butter or margarine
3 cans cream of chicken soup
2 (4 1/2 ounce) jars sliced mushrooms
1/2 lb shredded sharp cheddar cheese
1/2 lb shredded Velveeta cheese

In a large Dutch oven, fill 1/2 full with water; add salt and pepper if desired; add chicken breast halves.
Bring to a boil; cover and reduce heat; simmer 1 hour or until chicken breasts are done.
Remove chicken breasts, reserving broth, and allow chicken to cool; chop chicken meat into bite-size pieces and set aside.
Return chicken broth to a boil; add spaghetti noodles and cook until desired doneness; drain and set aside.
Saute onion and green pepper in butter until tender.
Combine onion mixture, cream of chicken soup, mushrooms, and cheeses; mix well.
Add spaghetti and chopped chicken; mix well.
Pour into a lightly greased 13x9 inch baking dish.
Bake at 375 degrees for 45 minutes.

Lasagna.

I like whole wheat pasta, but the regular kind is okay as well.

Here is how I make it if I want it easy.

1 large jar of store bought spaghetti sauce
1 container of cottage cheese (or ricotta cheese)
2 bags of shredded mozzarella
1 can of sliced ripe/black olives
2 cans of sliced mushrooms (or two packages of fresh, then you slice)
1 pound ground meat (beef or turkey)
2 fresh zucchini (sliced thin)
2 fresh yellow squash (sliced thin)
2 medium fresh tomatoes (diced)(canned diced can be used)
1/2 yellow onion diced
Olive Oil

Boil lasagna noodles until just al dente
Saute onions in olive oil until soft, then add ground meat and brown.
In lasagna type pan pour a little olive oil to coat, then add a couple of spoons of the sauce and spread over bottom of pan.
Layer ingredients in the following layers
Noodles
Ground meat
Tomatoes
Zucchini and yellow squash
mushrooms
black olives
dollop cottage or ricotta cheese in spoonfuls around pan
Mozzarella cheese
Sauce
Repeat until final layer, last layer should be tomato sauce, then cheese. Top with ripe black olives to decorate.

Bake at 325 degrees until bubbling and cheese is startign to brown

there is this dish called Cheese lo mein, and you put all ur favorite vegetables on the bottom of a pan then you put some long string noodles on top. You may add meat if you want. Then you pour melted cheese on top. Kind of like a salad but different.
