Nori: inside or outside?!


Question:

Nori: inside or outside?

Is there a reason some restaurants put the nori on their sushi outside the rice, and some put it outside? One of my favorite restaurants makes sushi with it outside, but I've seen it the other way around. Any real reason or just personal preference?

I would say that it is just personal preference.

Just a newer and cooler looking way to do it I guess.

You might notice that the basic rolls are made in the same way in different restaurants. For instance, the tuna roll has the nori on the outside at almost every sushi restaurant I've eaten at. There are variations in the more modern and American rolls. One really good reason to put the rice on the outside of the nori is so that additional ingredients like flying fish roe and sesame seeds can be stuck to the outside.

the way the nori is all just depends on how much you have in a roll. for example, a tuna roll only has one slice of tuna in it so it's not much to put in a roll. on the other hand, crunchy rolls have a big fried shrimp in it and some avocados. when there is more space needed, chefs just bump up to using 3/4 of a full nori sheet.
