alright: here are a few just to get started. contact me for more...

this works for either chicken or seafood.

for seafood: take frozen shrimp, scallops, and/or calamari (any or a mix) and sauté untill done. set aside. (add red pepper flakes while cooking to make it spicy).
Next, take a can of Coconut milk(can be found at most supermarkets like Trader Jos or Whole Foods) and add some sweet chilli paste or sweet chilli sauce. (i think its called the second) place the coconut milk ina medium saucepan with a thick bottom, and add the chilli sauce untill it makes a pink-orange color. (not as much chilli as you would think) some people like more chilli taste than others. let the mixture simmer for 10 min. drizzle the sauce over the seafood to taste. (i like a lot). the other thing you could do is add butter to the seafood to give it flavor. Now, this sauce works with chicken, talapia, cod, shrimp, scallops, calamari, and lots of other stuff...hope you like it! CONTACT ME FOR MORE!

easy chicken
INGREDIENTS
1/4 cup olive oil
1/4 cup fresh lemon juice
1/4 cup diced onion
4 skinless, boneless chicken breast halves
1/2 cup sliced fresh mushrooms
1/2 cup diced tomatoes, drained
DIRECTIONS
Heat oil, lemon juice and onion in a large skillet over medium heat. When onion is tender, add chicken, mushrooms and tomatoes.
Cook over medium high heat for 5 to 7 minutes each side, stirring occasionally, or until chicken is cooked through and no longer pink inside.

Buy a pork roast, put it in the crock pot, pour in bottle of your favorite BBQ sauce and a 12 ounce beer. Turn it on low before you go to work, when you get home, it's done. Take it out of the crockpot. Wrap in Aluminium Foil. (allow the meat to "rest")Make a bag of uncle Ben's rice. Heat up a can of corn. Unwrap meat. Viola! Easy dinner.

Rosemary Grilled Chicken

4 chicken breast
4 tablespoons of olive oil
3 cloves of chopped garlic
1 tablespoon fresh chopped rosemary
Salt and pepper


Rub breasts with olive oil, garlic,rosemary,salt and pepper.
Grill on medium high heat 5Min's on each side and serve with a mixed green salad.

Beetroot Parmesan and Rocket Risotto

1 onion diced fine
? cup Arborio rice or anything will do
1 small fresh beetroot about 2 ? inches around peeled and grated
One zucchini large about 7 inches lonf quartered and sliced
Large large handful of baby rocket rough chop
2 vegie stock cubes
Good splash of runny cream
Salt and pepper
Squeeze of fresh lemon
Olive oil enough to sauté the onions zucchini


Saute the onions and zucchini for about 4 mins
Add the stock cube
Add the rice and sauté for about 2 mins With the lid on
Add some salt and pepper
Add ? cup of water to start and simmer gently for about 10 mins with the lid on
Add more water if needed
Then add a good splash or slurp of runny cream and stir
Add the grated parmesan and stir
Add the grated beetroot and fold in. Do not over mix
Add a small squeeze of fresh lemon juice
Heat gently for a further 2 mins.

It should be nice and creamy consistency. Add more water if it is too dry

Quick Quesadillas

INGREDIENTS:
2 large flour tortillas
1 cup shredded jack cheese
1 small bell pepper
1/4 small onion, peeled and sliced
Optional- leftover beef or chicken
1/4 teaspoon cumin
1/4 teaspoon chile powder
PREPARATION:
Seed the bell pepper and slice into 1/4 inch strips. In a small pan, heat 1 teaspoon of oil over medium heat, and sauté the peppers and onions for 3-4 minutes or until slightly limp. While cooking them, sprinkle on the cumin and chile powder. Place a tortilla on a warm griddle over low heat Sprinkle on 1/2 of the cheese and all of the peppers and onions. Top with remaining cheese and the other tortilla, and heat for 3 minutes on each side or until cheese is melted. Remove and slice into wedges. Serve with guacamole and sour cream.

Steamed Fish

INGREDIENTS:
4 fish fillets, about 4 - 6 ounces each
2 tablespoons Chinese rice wine or dry sherry
1/4 teaspoon granulated sugar, or to taste
1/4 teaspoon salt
a few drops sesame oil
1 green onion, washed and finely chopped
1 tablespoon chopped cilantro, for garnish
1 large lemon, cut into wedges, for garnish
PREPARATION:
Prepare the wok for steaming. Rinse the fish fillets and pat dry with paper towels. In a small bowl, whisk the rice wine or sherry, sugar, salt and sesame oil.

Place the fish fillets on a deep, heat-proof plate that will fit inside the steamer basket Pour the rice wine mixture over the fish. Sprinkle with the chopped green onion.

Cover and steam the fish over high heat until the fish is opaque and flakes easily with a fork (10 - 15 minutes). Serve hot, garnished with the chopped cilantro and lemon wedges.

Quick and Easy Brownie Recipe

Ingredients
180 grams of bitter chocolate (in bar, broken up)
45 grams butter (in small pieces)
1 egg
? of a cup of sugar
1 teaspoon of vanilla
30 grams of flour
60 grams of almonds (sliced)
6 ice cream balls (flavors of your choice)


Preparation of Recipe

In a double boiler pot put 125 grams of the chocolate, and all the butter to melt it down, stir it for about 5 minutes, or until the chocolate and butter makes a smooth mixture.
Whip the egg, sugar, and vanilla until its fluffy. Keep whipping and go adding the chocolate mixture, then the flour, almonds, and the remaining chocolate pieces. Empty this mixture into a round oiled mold, (20 cm. diameter) and cook for 15-20 minutes or until it’s cooked. Unmold it upside down over a rag and let it cool off for 5-10 minutes before serving.
Cut the brownies in pieces an serve them warm accompanied with ice cream

2. Shake well and strain into a Martini glass.

3. Garnish with raspberries.

2 eggs, beaten
1/2 cup cold beer

3 cups oil for frying

Rinse chicken, and slice into 1 inch strips. In a medium bowl, stir together 1 cup flour, and baking powder. Mix in the eggs and beer.
Heat oil in a deep heavy skillet to 375 degrees F (190 degrees C).
Place remaining 1/2 cup flour in a small bowl. Coat chicken strips in flour, then dip floured strips into the batter. Fry a few at a time in hot oil, turning once, until coating is golden brown on both sides. Remove, and keep warm until serving.
