How to make pancakes fluffy?

I cannot make any pancakes fluffy..


Answers:
Mix them as little as possible. Leave a few small dry lumps of batter in the mixing bowl. DON'T over mix them and try to get all of the lumps out.

As soon as you have mixed them, have your grill/pan already very hot and pour a few tablespoons of your batter onto the hot grill. That should do it 4 you.

P.S. when you see a few bubbles appear on the top of the cooking pancake, turn it gently.

Mix them a little longer to incorporate more air into them.

i like to know how too! i cant make my pancakes fluffy either! help us ppl!

instead of beating your mixture you should just fold it over gently with the spoon. This allows the maximum amount of air to stay in.

I don't know which recipe you're using but buttermilk or sour milk pancakes are always fluffier. Try adding two teaspoons pf soda to the dry ingredients and one teaspoon of vinegar to the milk (let the milk sit for five minutes before using)

Mix only until the powder and liquid are completely mixed. Most pancake mixes have double acting baking powder in them, so let the batter sit for a few minutes to allow the baking powder to create some air. Don't over mix because you can actually beat out some of the air the baking powder created. When the pancake is cooking and is ready to flip it will look dry around the edges. Flip it once and don't touch it until it is done.

This is a trick we use for fluffier waffles and it probably will work for pancakes as well. We separate the egg yoke from the egg whites and beat the whites until they are fluffy. We then fold the whites into the batter and do not overstir. This makes waffles very fluffy. Try it for pancakes!

if you are using a mix like bisquick or hungry jack add 1/2 the amount of water called for and then add the same amount of club soda or 7 up, cook as directed.

Add one egg :-) Works great!

you don't want to mix it to much because it stretches the gluten and makes it tough.
