How can you receive accurate info when you don't tell us the capacity of your pans? Is anything else like salad being served like a veggie? Desert?

A lot depends on your recipe. It should state in the recipe how many it serves, then divide that number into 75 to get the number of casseroles you'll need.
I would think that you could get at least 10 servings per pan... Then you want enough for "seconds"... and some cases "thirds." lol
I say a box for every 2 people, so if I divide 2 by 75 it would be 37 and a half but it really depends on what else is being served and how much people are going to eat so I wouldnt make that much if other food is being served. I would say if there will be a bunch of other food about 25 boxes. If not then make a few extra and you will be set.
