Onion Soup

This is a fantastic soup especially on cold days. You can also put soup in individual onion soup bowls, add a few croutons and top with a handful of cheese; Mozzerella, Swiss, or whatever white cheese you like. Pop into oven on 350* and bake until cheese is melted and slightly golden.

4-6 large onions
1 tablespoon butter
1 tablespoon oil
1/4 teaspoon sugar
2 tablespoons flour
6 cups beef broth
1/4 cup white wine
salt & pepper, to taste

Cut up onion to your liking; sliced or cut in half width wise then into quarters then seperated.
Cook onions slowly on medium-low heat in butter and oil in a covered saucepan for 15 min.
Stir occasionally then uncover.
Increase heat to medium and add sugar.
Saute onions, stirring often, for about 30 min.
or until onions turn golden brown.
Sprinkle onions with flour and stir 2 to 3 min.
Heat broth and wine and add to onions; adjust seasonings with salt and pepper.
Simmer, partially covered, for 1 hour.

Onion rings. slice the onions. seperate the rings. place in a bowl of cold milk. Yes cold milk, put in refrigerator for 1 hour. remove onion rings from fridge. put flour in another bowl and place each onion ring in the flour until well coated. Now in a seperate bowl amke an egg wash simply eggs and alittle water and scramble them together. place each floured onion ring into the egg wash. in yet another bowl place store bought bread crumbs and place each onring in the bread crumbs until well caoted. fry in hot oil until golden brown

Blueberry Coleslaw

* 1 medium green cabbage, cored and finely shredded
* 1 small red onion, cut into quarters, thinly-sliced and separated
* 1/2 cup chopped parsley
* 2 tablespoons fresh grated orange zest (see Note)
* 1 pint fresh blueberries
* 1 cup blueberry mayonnaise (see below for recipe)
* 1/2 cup sour cream
* 1/4 cup blueberry vinegar (preferably low-acid, 4.5%)
* 3 tablespoons fresh squeezed orange juice
* 1/4 cup sugar
* 3/4 teaspoon ground cloves
* 1/4 teaspoon ground nutmeg
* Salt to taste
* Fresh ground black pepper
* Orange slices for garnish

Place cabbage, onion, parsley, orange zest, and blueberries in a large bowl.Gently toss to mix evenly.


In a separate small bowl, whisk together blueberrry mayonnaise, sour cream, blueberry vinegar, orange juice, sugar, cloves, and nutmeg. Season with salt and pepper to taste.

Pour dressing over cabbage and blueberry mixture and toss gently to coat. Refrigerate for 2 hours before serving. Garnish with orange slices to serve.

Onion Pie


1 Package active dry yeast
3/4 c Water (105 to 116 degrees F)
1/2 ts Salt
1 1/2 c All purpose flour
1 1/2 lb Sweet onions
1/4 lb Diced smoked ham (1/2″ dice)
1 c Sour cream
4 ea Eggs
Pinch of salt
1 tb Caraway seeds
2 tb Oil or melted butter

In large bowl, dissolve yeast in warm water. Let stand 5 minutes. Add
salt,oil, oil or butter, and flour. Beat until dough is smooth and satiny.
Cover, let rise for 1 hour (until doubled). Cut onions into thin slices.
Place in frying pan along with ham and cook over low heat until onions are
soft (about 15 minutes). Remove from heat, stir in sour cream, eggs, salt
to taste, and caraway seeds. Butter 10 inch pie, quiche or tart pan.
Preheat oven to 400 degrees F. On lightly floured board, roll out pastry to
fir prepared pan. Turn filling into lined pan. Bake for 35 to 40 minutes
until crust is browned and pie is set.

ONION SORBET

Amount Measure Ingredient -- Preparation Method

2/3 c Sugar
2/3 c Water
3 lg Yellow onions
1/4 c Wine vinegar
1/4 c Parsley, fresh -- fine minced
2 Scallions -- finely minced
1/2 ts Salt
1 c Yogurt, plain
Fresh parsley or chive -- mince

“This is wonderful with cold meats. Serve the sorbet
in pretty lettuce cups, avocado halves, small green
pepper halves, or hollowed-out small (not
cherry--they're too small) tomatoes.”

Combine the sugar and water in a small saucepan. Over
medium-high heat, cook and stir until sugar is
dissolved. Just before the boil, remove syrup from
heat and allow to cool. Cover and refrigerate.

Boil yellow onions, drain and puree.

Combine onion puree, vinegar, parsley, scallions,
salt, and chilled syrup and blend well. Place mixture
in an ice cream maker and freeze until sorbet is still
soft. Add yogurt and continue churning. (If using a
conventinal freezer, freeze in a stainless-steel
container. Thaw partially, spoon mixture into a food
processor or blender, and process until smooth. Add
yogurt and blend well. Refreeze.)

Serve garnished with parsley and/or chives

Hope these few recipes are of use to you,

Carmelize them by closed lid sauteeing them in some olive oil over medium low heat for 30 minutes..then open lid pan fry them with some garlic and chopped up potatoes that have been boiled soft. Cook some small length pasta to al dente then simmer it with the potatoes/onions. Season with lots of pepper, some coriander, salt/sugar, onion/garlic powder and some parsley or however you like. If you have access to/use gimme lean sausage you can roll it into half inch balls and add it to the potato/garlic step.

This is an adaption to an italian pasta soup I grew up eating..not sure what it's original name is - more of a heritage dish that just got passed down. =)

I have never cooked sweet onions but a great way to have red onions is to do them as follows, and I'm sure that sweet onions would be yum too:

A Sort-of Onion Gratin!

In a hot 220C oven, place some quartered onions in an earthenware baking dish and pour over a glass or two of white wine (quite a dry grape), some sprigs of thyme, the smallest amount of salt and some liberal peppering. Cover with foil and roast for around 30 mins. Remove foil and bake for ~20 more, this allows the juices to reduce and intensify and for the tips of the onions to become burnished and sweet.

Next, turn over down to 200C, swirl in a few dollops of creme fraiche into the oniony juices and top with an appropriately sized handful of Gruyere and a slightly smaller handful of Parmesan (or Grana Padano). Put in the oven, or under the grill, until the cheese has melted and is bubbling.

This is a very well behaved dish that will happily sit covered in foil. In fact, the flavours intensify with resting, so great to serve with a roast or something that needs last minute TLC.

Enjoy!

I like to grill them with a splash of balsamic.

My fav is oven roasted. Cut them into big chunks, drizzle with Olive Oil toss to coat, salt pepper, Spray a baking sheet with Olive oil(or any type of spray oil) bake in pre-heated 400 degrees oven for 20 minutes. Toss again cook until done. About 10 more minutes, should be tender but not mushy.
This is also good using Balsamic Vinegar instead of salt & pepper.

I have made these coconut onion rings before with Maui onions and they are INCREDIBLY delicious! I haven't made them since I stopped eating egg, but I'm sure if you're vegan you can figure out what to use in place of it.

1 cups high quality coconut milk
1/2 cup all-purpose flour
1 egg
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons sugar
2 tablespoons coconut extract

Mix all ingredients well in small mixing bowl. Let sit in the fridge for 1/2hr.

The onion'

Buy sweet onions. 2 or 3
Maui, Walawala or Texas Sweet, vidallia etc..

Peel and Slice in thick rings
Soak in cold water for 10 minutes
Dry thoroughly

The coating

2 cups panko (Japanese Bread crumbs)
1 cup shredded coconut, Best if unsweetened as the sweet kind will more easily burn
Mix together

In a wide pan, shake the onion ring slices in flour to lightly coat them (this will help the batter adhere better)
Dip them into the batter
Then dip them thoroughly in the coating.
Place on a sheet pan lined with foil or waxed paper in single layers, do not lay rings directly onto of one another

When you have completed all the rings place in the freezer for 1hr.

Heat your oil 4'' of it, to 375' degrees. Fry rings until crispy and golden brown. You can heat your oven to 250' and transfer you completed rings onto a sheet pan so they stay warm.

1 (1/4-ounce) package dry yeast
1-1/4 cups warm water, divided
3 cups flour
1 teaspoon salt
6 tablespoons olive oil, divided
2 Walla Walla or other sweet onions, thinly sliced
2 cloves garlic, minced
1 tablespoon fresh chopped basil
Parmesan cheese

Dissolve yeast in 1/4 cup of the warm water. If using a food processor, measure flour and salt into the processor bowl, add yeast mixture and 1/2 cup of the remaining 1 cup of warm water while machine is running. Add 1 tablespoon of the olive oil, then add enough of the remaining 1/2 cup of warm water to form a soft dough (but not sticky). Let dough rest for a few minutes, then process a couple of seconds and turn dough onto lightly floured board. (If not using processor, place yeast mixture and the 1/2 cup of water in bowl, add flour, salt and 1 tablespoon of oil and mix by hand, adding additional water as needed to make a soft dough.)

On a floured surface, knead dough for 10 minutes. Let rest for 2 or 3 minutes, then knead another 5 minutes, or until dough is very smooth. Place in a lightly oiled bowl, cover and let rise in a warm place until double in bulk, about 1-1/2 hours. Punch the dough down and roll out to 1/4-inch thickness, shaping it to fit into a 12- by 16-inch pan. Press onion slices into the dough. Add the minced garlic and chopped basil to remaining 5 tablespoons of olive oil, then drizzle this mixture over the onions, smoothing the oil over the onions and dough with your fingers or pastry brush. Let the dough rise uncovered, in a warm place, for 30 minutes.

Sprinkle with the Parmesan cheese. Bake in middle of a 400 degree oven for about 25 minutes, or until golden. Yields 6 servings.

Red onion tartlet.

You need : 1 large red onion
Balsamic vinegar
Dash red wine
Ready made shortcrust pastry
In a pan put a good dash of red wine and heat gently.
Chop your onion quite coarsly and caramelise with the wine until soft and tender. Add the balsamic vinegar and reduce down on a low heat until most of the liquid is gone.
Make bun cases or make one big tart with your pastry and fill with the mixture. Usually I would top with a thick slice of goats cheese before baking until the pastry is cooked (about 15 minutes) but as you want a vegan recipe that is out of the question. Maybe use whatever you vegans use instead of cheese (not being funny I just dont know what to use as a substitute)
Serve hot or cold

Oven Roasted Sweet Onions

2 sweet onions, about 8 ounces each
3 cloves garlic, peeled, sliced thinly
3 bay leaves
8 parsley stems
3 sprigs fresh sage or 1/2 teaspoon dried
2 sprigs fresh oregano or 1/4 teaspoon dried
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1/4 cup balsamic vinegar
1/4 cup extra virgin olive oil

Heat oven to 500 degrees. Cut unpeeled onion into eighths. Place onion wedges in a single layer in a shallow baking dish. Sprinkle with garlic and herbs. Season with salt and pepper; drizzle evenly with vinegar and olive oil. Roast until onions are lightly caramelized and barely tender, 12-15 minutes. Remove from oven and let cool. Serve at room temperature.

Yield: 4 servings
