FENNEL SEED ROLLS

Mix: 6 eggs 1 c. oil 1 tbsp. salt 1 c. sugar 1 cake yeast or 2 pkgs. dry yeast Handful of fennel seeds Enough lukewarm water to make a soft dough (about 4 c.)
Let rise. Shape into rolls and let rise again. Brush each one with a little beaten egg before placing on a greased baking sheet in a 400 degree oven for 15 to 20 minutes.

FENNEL SEED "TARELLA"

1 c. oil
1 egg
1/2 tsp. black pepper or more according to taste
3 1/2 c. flour
4 tsp. baking powder
2 tsp. fennel seed
1 c. white wine
1/2 tsp. salt

Mix ingredients together with a spoon. Take about a tablespoon of dough and roll between the palms of your hands to make 3" to 4" strip. Form into a circle. Bake at 375 degrees for 20 minutes or until brown.

BLACKENED HALIBUT

The following is an excerpt from the book Grill! by Pippa Cuthbert & Lindsay Cameron Wilson.
A hot grill coupled with a crispy, "blackened" crust adds a fiery, Cajun touch to halibut. New Orleans chef Paul Prudhomme is to thank for putting "blackening" on the culinary map.



For the rub:

1 tsp salt
1 tsp dried thyme
? tsp dried oregano
? tsp cayenne pepper
? tsp hot paprika
? tsp freshly ground black pepper
? tsp fennel seeds, toasted and roughly chopped
Salt and pepper, to taste

4 halibut fillets, 7oz (200g) each
Olive oil, for brushing
1 lime, quartered

Combine the ingredients for the rub in a small bowl. Place the halibut fillets in a shallow baking dish and brush with oil. Pat the rub all over the fish. Season with more salt and pepper. Cover and chill for up to 1 hour, in the refrigerator.

Preheat the grill or grill pan to hot. Brush the grill bars well with oil. Grill the fillets for 2-2? minutes on each side until charred and just cooked through. Serve immediately with a squeeze of lime.

Serves 4.

HMMMM, I have just used them ( fenugreek sprouts)in salads , stir frys and on sandwiches. Very good!

fenugreek is a great spice for curries and spiced foods. try grinding some and adding ateaspoon to your curry. or to specialise the flavour, fry with some garlic, ginger and ghee then add fenugreek with cauliflower florets, cover and steam saute till tender, yum with tomato relish.
Fennel seeds are aniseed flavoured, good to balance fatty foods like pork/bacon or a poaching liquid for fish and chicken. Try with marinated finely shredded cabbage, crushed and added to mayo to serve with fish and chips or crush with garlic and smear over tomatoes before grilling.

Italian sausage has fennel seed in it. Sometimes they are cracked before going in the sausage to flavor it better.
I don't know of anything with fenugreek.
