Is edam cheese pasteurized or unpasteurized?


Answers:
Being a former chef, if it is a raw milk cheese the milk cannot be brought to above the pasturization temp, edam is a pasturized cheese, as the curd is cooked and the cultures are added to the curds before the molding process, and it is dipped in wax to keep the culture in.

Like with swiis cheese the milk temparture is important to the aging and structure of the cheese, it is kept at a warmer temp than cheddar or other cheese this forms the holes, camembert is kept in a humid condition to effect the mold to grow and the white film on the outside to form.
