CHEESE HAM STRATA

8 slices white bread
2 c. cheddar cheese, grated
3 c. buttermilk
4 eggs, beaten
2 tsp Worcestershire sauce
3/4 tsp dry mustard
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 c. sliced ham, chopped

Alternate buttered layers of bread, cheese, and ham in a greased baking dish, ending with cheese on top. Mix remaining ingredients and pour over layers. Allow to stand one hour in refrigerator. Bake at 325 degrees Fahrenheit for 50 to 60 minutes or until golden brown on top. Cut into squares and serve.

CINDY'S HAM AND BEANS

1 large package of white northern or navy beans
1 picnic ham
1 cup thickening made from flour or cornstarch
1 onion
2 large carrots
1 tsp. ground black pepper
1/4 tsp. Lawry's seasoning

This recipe ensures that ham taste without the loss of the ham flavoring to the meat itself! This is my own recipe which was developed through years of trial and error. Picnic ham is the most flavorful.
First, cook and prepare picnic ham the night before. Place in roaster adding at least a quart of water or enough for water to cover up to 2/3 of the ham's sides. Make sure water doesn't evaporate; check periodically. Cook until very tender.

Cool and refrigerate until the next day. On the following day, debone and cut the ham into chunks and set aside. In a saucepan, bring ham broth to a boil, add thickening and set aside.

Prepare beans by soaking them in salted water for 1/2 an hour; drain and rinse.

Place beans in a large pan, adding enough water to cover beans. Cook over high heat. When beans begin to boil, reduce heat to med-low setting. Check beans as they cook and add small amounts of water as needed. You can make beans soupy or thick, as desired. Add seasonings, to taste, and carrots and onions.

When beans are 3/4 way done or 20 minutes before serving, stir in thickened broth and ham.

*Note: If 1 cup thickening is not enough to make a thick broth add more. Cook at least 20 minutes after adding thickening.

LEFTOVER HAM AND CORNBREAD CASSEROLE

2 or 3 cups of leftover ham, chopped
2-3 leftover cornbread for topping the casserole
1 small carton sour cream
1 can (don't dilute) cream of mushroom soup
1 package (2 c.) grated cheddar and mozzarella cheese
2 eggs
1 1/2 sticks butter
1 package frozen broccoli in a bag with the three types of cheese

Note: Don't use sweet cornbread mix - use homemade or some kind that is not sweet. Grease Pyrex dish with spray oil. Put ham, soup, and sour cream in the dish (just mix it all in the Pyrex dish).
Whisk the two eggs and add to the ham mixture and blend well. Cook broccoli in bag for 5 minutes in microwave. Poke a few holes in the bag first. Add this to the ham mixture and blend it in well.

Top this with the 2 cups (or an entire bag) of finely shredded cheese. Do NOT mix this in with the ham mixture! It's a cheese layer.

In another bowl, crumble up the leftover cornbread and add the butter.

Cook in the microwave until the butter is melted. Blend the butter into the cornbread until it is moist.

Spread the cornbread/butter over the cheese.

Bake in the oven at 350°F for about an hour or until the top is brown.

It is so good if it's a bit crispy on top!

HAM AND CHEESE QUICHE

4 eggs
1 can cheddar cheese soup
1/2 c. light cream
1 c. shredded cheddar cheese
1/2 c. diced cooked ham
1/2 c. cooked broccoli
1 9" unbaked piecrust

In a medium bowl, beat eggs until fluffy. Add soup and cream; mix well. Sprinkle cheese, meat, and broccoli over unbaked piecrust. Follow with soup mixture.
Bake for 50 minutes at 350°F.

AU GRATIN POTATOES AND HAM

6 med. (2 lb.) potatoes, peeled and sliced
1 med. onion, chopped
8 oz. cooked ham, cubed
4 oz. shredded American cheese
10 3/4 oz. can cream of mushroom soup
1/2 c. milk
1/4 to 1/2 tsp. thyme leaves

In slow cooker layer: 1/2 potatoes, onion, ham, cheese. Repeat layers. In small bowl, mix soup, milk, thyme. Pour over potatoes. Cover, cook on HIGH setting for 3 hours. Reduce heat to LOW setting for 2 to 2 1/2 hours until potatoes are tender.
Makes 6 servings.

SPLIT PEA AND HAM SOUP

1 ham bone
1 lb. dry split peas
4 cloves garlic, minced
1 tablepsoon each butter and olive oil
2 quarts water
2 bay leaves
1 lb baby carrots
1 lb spaghetti, broken into 3" pieces
salt and pepper, to taste
1 can evaporated milk or 1 cup light cream or milk

Empty package of split peas into a colander or bowl. Sort through well, removing foreign matter and imperfect peas. Rinse well. Soak for two hours in 2 cups water.
In a large soup pot or Dutch oven, sauté minced garlic in 1 tablespoon of butter and 1 tablespoon olive oil until garlic golden, but not brown in color. Add ham bone, water in which peas have been soaked and 2 extra quarts of water, and bay leaves.

Bring to a boil for 1 minute; reduce heat and simmer, covered for 1 hour. Remove cover and simmer an additional hour or until soup is desired consistency. Add baby carrots during final 20-30 minutes of cooking (may be roughly chopped, if desired, or leave whole).

If you prefer a pureed soup, process using a hand blender before adding carrots.

Taste soup one half hour before serving; add additional garlic or garlic powder and salt and pepper, as desired. Bring a separate pot of water to a boil and cook spaghetti according to package directions. Drain.

Stir in milk or cream 10 minutes before serving. If you have any leftover ham, add at this time. Stir in spaghetti. Remove bay leaves before serving.

Note: Kids like to use the leftover soup the following day for an after-school snack by adding hot dogs sliced into 1 inch coins boiled briefly in a saucepan and stirred in. The soup thickens up overnight in the refrigerator, so stir in more milk or a pat of butter before serving.

Fritatta. I cook diced potatoes in a little olive oil and butter w/ S&P until crisp. Top with 2c chopped ham ,1 c shredded cheese and any herb you like(chives or parsley is what I use.) Beat 6 eggs and a little water by hand and pour on top.Cook on low heat on your stove top until set and finish it in a 350 oven for about 20 mins.(Make sure that your fry pan is oven safe)Slice it like a pie and top with a few more herbs for garnish!! You could also stuff a calzone with shredded cheese, sliced mushrooms, chopped ham and whatever else you like!!! Enjoy

Throw some of it into a scalloped potatoe or potatoes au gratin recipe. Yummy! It's also good with pasta alfredo... Cook with dried peas and in a half hour you have pea soup...

sliced thin and used for sandwiches, with mustard and little bit of dried dill

Run it through the food processor to mince, add chopped red onion, celery, either mayo or mustard, pepper, garlic powder or whatever spices you like and either served on a bed of lettuce or in a sandwich or wrap with more lettuce.
