A meat cleaver and some marinade for steak is good. Or, especially if your pan frying, put tons of cilantro on each side and fry in oil on med.

well if your talking about a steak for the grill...it will depend on the cut of meat....but a good cut...you could marinate it, but i like mine rubbed with a little olive oil (for flavor and to not stick to grill) and a garlic and herb blend....for a not so good cut, marinate it for and hour or so prior to cooking in a citrus or vinegar based marinade to help break down the connective tissue that is what makes the meat tough....

Sprinkle with bourbon and soy sauce. Let rest at room temperature for 15 minutes, then sprinkle liberally with Lawry's California style garlic salt and Lawry's Lemon Pepper seasoning. Return to refrigerator uncovered for up to 2 hours before grilling. Can use outdoor gas or charcoal grill or pan fry in heavy skillet. If cooking indoors, use less Lemon Pepper, as it may burn.
