Why does my carrot cake collapse in the middle?

have asked this question and have tried reducing temp of oven, extending cooking time etc - please help!!!

why don't you try another recipe?

p.s. sometimes a cake sinks if you have beaten it too much after you add the flour ....
sometimes if your oven is not properly callibrated (i.e. if it doesn't heat to the temperature to which you set it ...)it will not rise properly if too low a temp
...sometimes if you open the oven door at a critical point in the baking, a cake will fall ...

maybe there is a small bunny rabbit in the middle eatting the carrots

try adding a little more oil, and then let the cake cool naturally in the oven before takin it out

what i mean is leave the cake in, turn the oven off and then when its cool take the cake out.

also try a litlle pinch of salt, and a teaspoon of baking powder

i normally make my carrot cake in the microwave like gary rhodes and it turns out perfect everytime

If the seal on you oven has gone and it is not maintaining temperature this can cause your problem. If the oven is okay then try a new recipe. I got mine from the BBC Saturday kitchen website and it works every time, as a result my wife is now amazed at how well I can bake. See: http://www.bbc.co.uk/food/recipes/databa...

I watched James Martin on Saturday morning being asked the very same question. He said when he was training his chef said to him that he should always drop the cake on the floor (still in the cake tin obviously!!) He was told to drop it about 3 foot from the floor.

Don't know if this works but James said it does!!

sometimes if you take out the mixture whilst baking to check on it this can suddenly drop the temperature and it can cause the cake mixture to sink in the middle,the first half baking time is very important as this is when the cake is raising, or it could that you put too much sugar substance in the recipe, reducing the temperature will not help it if it has already sunk, bake on the middle rack and wait at least half the time of the baking period before taking out to look at it, hope it helps.

This happened to me a few times, before I asked my mom and she told me; first check to make sure that the baking powder you are using is not expired. Also depending on the size of the cake, you should only open the oven to check on the cake after 20 minutes after you put it in not before that, if you do opened it before that might be causing your cake to collapse.

Too much moisture, don't fret, I love soggy cake as do many other people.

Make sure your eggs are not cold, many people keep them in a fridge, take them out several hours before using to allow them to attain room temperature...
