www.cutco.com, - Look it up. :D You don't like them. Go buy Henckles. Cutco has the same quaility as Henckle's, but it's cheaper.

a.j. henckles are good, and so are wusthoff. another good brand is cutco. all are a little pricey, though.

I agree with the CutCo answer. Cutco is sold through local dealers, there are no stores to purchase Cutco but the small hassle in getting a salesguy to visit you and give you the Cutco demonstartion is well worth the effort. Also the sales guys can usually cut you a better deal than a web-direct sale. High quality knives at a resonable cost.

A great number of top quality chefs use J. A. Henckels four star knives. they hold an edge well, are well balanced, and clean up well. Most health departments want knives that are one piece-( not to many rivets for germs and bacteria to grow in ) Henckels meet this requirement.

I personally use Vitorinox knives, have done all my career.

Whustof :- Bought a £600 set, sold them after 3 months, didn't like the balance

Vitorianox are cheap and will last for ages if looked after. I've had a Rosewood Handled chef's knife for over 6yrs, which is a long time in the UK chef industry

The best professional knives are not a brand, they are the knives that fit and suit *your* hand perfectly, that have a weight that suits *your* wrist strength to a T, that have a grip that make *you* feel secure in control of the knife, and that are as razor sharp as each knife's task set and your personal likes and dislikes dictate.

Mine in my working kitchen have been made by 6 cutlers in three countries, and the set in my private kitchen don't resemble the one in my working one. Horses for courses... :-/

Gather yours as you go along and grow in experience. The way you look at kinves early on completely changes as your skill set grows. Like everything else, really.
