FRITO-BEAN SALAD
1 pkg. reg. Fritos
1 can Ranch style beans
1 tomato
1 onion sweet (1020 or purple onion)
4 to 6 oz. cheddar cheese
1 small can of sliced olives, drained
1 bag of prepared lettuce of choice, Chopped into bite size
1 bottle Catalina salad dressing
In large bowl, add chopped tomato, onion and bell pepper. Drain and rinse ranch style beans. Add all ingredients. Before serving, add Fritos and Catalina salad dressing.

TEXAS COUNTRY POTATO SALAD


4 c. cubed cooked potatoes
1 c. chopped celery
3 chopped hard cooked eggs
? cup. Chopped red onion
? cup. dill pickle relish
2 tbsp. chopped parsley
2 tbsp. chopped pimento

Dressing:
1 qt. Miracle Whip
1/2 c. sugar
1/2 c. vinegar
3-4 tsp. prepared mustard
1 tsp. salt
1 c. sour cream (1/2 pt.)


Combine potatoes with the 6 other ingredients mix lightly. Combine dressing ingredients stir well. Pour over the potatoes and Chill 1 hour.

Vegetable Rotini Salad

3 cups tri colored pasta
1 cup chopped cucumbers
1 cup halved cherry tomatoes
? cup sliced black olives
? cup Zesty Italian Dressing
? cup chopped red onion

TOSS all ingredients in large bowl
Cover and refrigerate at least one hour

macaroni salad: cooked and drained elbow macaroni, diced onion, diced pimentos, chopped black olives miracle whip and sour cream
spaghetti salad: cooked and drained spaghetti, chopped green onions, tomato, cucumber, celery Italian dressing and McCormick Salad Supreme

Oriental Sesame Chicken Salad

Shredded chicken, sunflower seeds, slivered almonds and ramen noodles help make this a delicous main dish salad.
INGREDIENTS:
2 tablespoons Sunflower Seeds
1/2 cup slivered almonds
2 packages ramen noodles, smashed
2 cups shredded cabbage
4 chopped green onions
1 small grated carrot
1/2 pound cooked, shredded chicken
3 tablespoons chinese rice wine vinegar
3 tablespoons sugar
salt and pepper to taste
seasoning package from ramen noodles
1 tsp. sesame oil
1/2 cup vegetable oil
PREPARATION:
Toast almonds, sesame seeds and ramen noodles under the broiler until golden brown.
Mix in with the next 4 ingredients. Add the dressing (the last 7 ingredients, mixed together and shaken).

Chill everything mixed together for an hour before serving.
p.s.You can use the bag of ready made cole slaw

Oh just go to the fridge and chop up some spinache, lettuce, onion, mushroom, feta cheese, olives,add some shimp toss in some dressing.

try this :

1 half a head of freash lettus
1cup of chopped carrots
1cup of chopped onions {optional}
1 fresh tomato
1/2 cup of cucumbers {optional}
1/2 of a cup of greated cheddar cheese
dressing of your choise
1/2 of a cup of croutons


directions:
break appart lettus into a large bowl. chop up the carrots,onions,tomatoes,and cucumbers. mix into the bowl. add the cheese and croutons.
when dished out add the dressing of your choice

leftovers:
cover with either plastic wrap or foil and place in fridge
will stay fresh up to an additional 24 hours

romaine lettuce, grilled chicken pieces, roasted walnuts, crutons, strawberries, parm. cheese..and dress with honey mustard.....(honey, dijon mustard, olive oil, little vinegar)

BBQ eggplant and tomato salad

1. Put little slits on the eggplant skin
2. Oil the eggplant and put it in the bbq till soft (takes about 30 minutes for a medium sized eggplant)
3. Oil and BBQ the tomatoes for about 8 minutes
4. Skin the eggplant and mash it (using forks, so it is a little chunkie)
5. Mash the tomatoes with skin
6. Mix it with the eggplant
7. Add olive oil, red bell pepper (fresh), salt, pepper.
8. Decorate with basil and baby spinach

Cucumber yogurt drink

1. Add cucumber, yogurt/buttermilk, salt, mint, pepper
2. Blend and serve

This is a very basic salad

SALADA
1. cut up cucumber
2. Add corn from a can
3. add 1 chopped hard boiled egg
4. some carrots and olives
5. Add a teaspoon of mayo and a tablespoon of yogurt (yogurt enhances the flavor of mayo, so a little mayo goes a long way)
6. Add a little mustard and pepper

Tangy chickpea salad

Ingredients

- Canned/boiled chickpeas ? cup
- 2 tablespoon tamarind juice
- sliced onions
- ? cup diced cucumber
- Cilantro leaves
- ? teaspoon Chat Masala (available in indian grocery)

1. Mix all the ingredients, except the chat Masala
2. Sprinkle the chat Masala just before serving.

These are three semi easy and VERY yummy salads we eat regularly. Enjoy!!

Taco Salad
1 Lb. Ground Beef (hamburger meat)
1/2 C. Taco Sauce
1 Small Head Lettuce, torn into bite size
1 Med. Tomato, cut into wedges
1 Med. Green Pepper, cut into stripes
1/3 C. Pitted Ripe Olives, Drained
2 C. Shredded Cheddar Cheese
1/2 C. Thousand Island Dressing
1 Bag Taco Flavored Tortilla Chips
Cook ground beef over medium heat then drain. Stir in Taco sauce. In large bowl toss lettuce, green pepper, tomato wedges, olives, cheese, and chips. Spoon beef and salad dressing over lettuce mixture; toss and serve immediately.
Yeild: 8 servings

Chinese Chicken Salad
3 to 4 chicken breast or 1 precooked chicken from the store
1 head lettuce, shedded
2 tablespoons almonds, slivered
2 tablespoons sesame seeds, toasted
4 green onions finely sliced DRESSING
1/2 to 1 whole package won ton skins
oil for frying
Dressing Ingredients
2 tablespoons sugar
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon sesame oil
3 tablespoons rice vinegar (reg. vinegar can be used)
Cook chicken, skin, bone, and cut into bite-sized peices.Combine lettuce, almonds, sesame seeds, and green onions in a large plastic bag. Cut won ton into strips and fry in small amount of oil until brown and crispy. Drain on paper towel. Combine remaining ingredients for dressing in a small container. Crush won ton and place in med size plastic bag. Once ready to eat, add won ton to lettuce, pour dressing into baggie. Toss and pour from bag to serve.

EL TORITO CILANTRO PEPITA DRESSING
1 medium roasted peeled and seeded Anaheim chile
3 tablespoons roasted pumpkins seeds
1 clove garlic
1/8 teaspoon freshly ground pepper
1/2 teaspoon salt
3/4 cup oil
2 tablespoons red wine vinegar
3 tablespoons grated Cotija cheese
1 small bunch cilantro
3/4 cup mayonnaise
2 tablespoons water
Pulse blend chile, pepitas, garlic, pepper, salt, oil, vinegar and Cotija cheese for 10 second. Slowly add cilantro until paste forms whisk mayonnaise and water in large bowl (preferably stainless steel) Stir in chile mixture Cover and chill at least two hours Serve over romaine lettuce topped with fried tortilla strips and pumpkin seeds.
Variations: Use parmesan instead of Cotija cheese
NOTE: Cotija cheese is a hard cheese, similar to Parmesan

This one is my favorite.

Beef Noodle Salad for Two

2 tenderloin steaks
1 bottle Emerils marinade (Sesame Asian)
1 package of spring mix
1 package of Asian noodles prepared
1 avocado diced
1 mango diced
1/2 carton of cherry tomato
1/2 cup peanuts
Fresh Mint
Oriental dressing (Wise bone makes a light sesame and ginger vinaigrette that i use) or a spicier Thai peanut dressing for a kick

Marinate your steaks for half an hour to hour. Throw on the grill and cook to your preference. Slice into thin strips.

Combine salad ingredients and toss with dressing, top with strips of steak.

This is a wonderful salad for a hot day, the avocado and mango give it such a cool taste and contrast well with the steak and Asian flavor dressing.

Aura Chicken Salad
Ingredients
5 cups torn Romaine lettuce
2 grilled, sliced boneless, skinless chicken breasts
1 cup salted cashew halves
8 oz. can sliced water chestnuts
6 oz. pkg. thawed snow peas
3 oz. can chow mein noodles
1/4 cup chopped green onions
1/4 - 1/2 cup Asian Aura Dressing?

Directions
In a large bowl combine first 7 ingredents; toss with Asian Aura Dressing? to coat. Serve immediately.
