also, what are the main different coffee roasts / blends / etc.


Answers:
coffee beans are all roasted. they are light tan/pale green before being toasted.
The roasts are french roast-dark and Italian roast, darker I think. I wonder if the lightest roast is called American roast?
Blends can vary as to what you like. A company around here(NC) does different bean mixtures for different restaurants.

Coffee beans are raw from the time they are picked, until the time they are roasted. They look different raw, so it is easy to tell the difference. I have seen many types of beans/roasting methods/blends so I am not sure how many main types there are.

Yes they are roasted to bring out the flavor. The unroasted beans can be refered to as raw or green coffee beans.
